    When your meal bites back tips for avoiding food poisoning

     

    Around the world, food-borne illnesses have become increasingly common. In the United States alone, millions of people get a food-related illness each year. "Even the healthiest foods can make a person sick if they aren't handled, cooked or stored properly," says Dr. Robert Berkow, editor in chief of Your Health Now, a new health magazine from the global pharmaceutical company Merck & Co., Inc. Here are some tips on how to avoid getting sick: • Always wash hands before handling food. Illnesses are easily transferred from person to person through food. Washing hands before touching fruits, vegetables and other foods helps to kill any bacteria that may be transferred from the person's hand to the food. • When handling raw meat, poultry or pork, always clean up thoroughly. Don't just wash your hands but also clean the surfaces of cutting boards, countertops and utensils you use. The bacteria known as salmonella spreads easily on surfaces that come in contact with raw meat. • Avoid eating undercooked food. Undercooked beef, chicken and seafood increase a person's chance of getting salmonella or E. coli, another type of bacteria. This can cause fever, cramps, nausea, vomiting and diarrhea. • Do not eat foods that contain raw eggs. Raw eggs may be contaminated with salmonella, which can be killed by cooking. When cooking, always throw away cracked or dirty eggs. • Avoid drinking juices that have not been pasteurized. The pasteurization process kills bacteria such as E. coli. • Avoid canned foods that are bulging or dented, or jars that are cracked. Lids should not be loose or swollen. Look at the "sell by" and "use by" dates. Avoid foods that will expire soon after purchasing and never buy outdated foods. • Properly store and refrigerate foods when they're brought home. Cooked foods should not be left to stand at room temperatures for long periods before serving, and leftovers should be refrigerated within two hours. • When in doubt, throw it out. If you aren't sure if that leftover is safe to eat, then toss it in the trash.

    Today's grillers are hungrier than ever for more flavorful foods, as evidenced by the steady increase in the sales of wood chips and wood chunks over the last several years (according to the Hearth, Patio & Barbecue Association). "When you add particular kinds of wood smoke to your food, you are taking advantage of a technique that most people associate with charcoal. Actually, it's just about as easy to control wood smoke with a gas grill, and the results are fantastic," says Chef Jamie Purviance, author of "Weber's Real Grilling." As one of the country's top grilling and barbecue experts, Purviance offers consumers useful tips when smoking meats, fish and vegetables on gas grills: Choosing a Smoking Flavor. "The world of barbecue has its traditional pairings of certain woods with certain meats, like hickory with pork and mesquite with beef. Those traditions wouldn't last if they didn't taste great, but keep in mind that there are many flavors of wood and foods, other than pork and beef, that improve with a touch of smoke," says Purviance. Purviance suggests smoking with hardwoods provided they are sold dry and untreated. Avoid softwoods, like pine and fir, because they are too resinous for smoking. According to Purviance, hardwood chips and chunks fall into three categories of flavor intensity: pungent (mesquite, hickory and pecan), moderate (oak, maple and alder) and mild (apple, cherry and pear). "Beef, lamb and pork handle the pungent woods really well," he adds. "For the moderate woods, I like fish, pork and poultry. It's amazing what a handful or two of oak chips can do for chicken pieces. Very quickly they pick up a deep wood-fired flavor without any bitterness. The mild woods have an even sweeter, fruitier quality, which works beautifully with chicken and also with vegetables." Prepping the Wood. Not quite ready for grilling, wood chips should be soaked in water for at least 30 minutes; chunks need at least a one-hour soak. Soaking ensures that chips/chunks will smolder rather than simply burn. Thoroughly drain and loosely fill the gas grill's smoker box, such as the one featured on some Weber Summit® grills, and leave enough room for air to circulate. On the Rocks. Even without a smoking attachment, you can still enjoy the diverse, rich flavors imparted by smoking. Simply place presoaked wood chips in a foil pan, cover with aluminum foil, and poke enough holes in the foil to allow the smoke to escape. Once the grill is preheated, place the foil pan directly on the bars or lava rocks over the lit burner. Place the cooking grates on top, turn the burners on high, and close the lid. Begin cooking when the grill is fully smoking. Smoking Sense. Whenever smoking your foods, Purviance offers this last reminder: Meats and vegetables will taste best if the smoke is kept inside the grill. So don't peek too much. Keep the lid down when grilling with wood. And, for safety, always allow the wood to cool completely before disposing it.

    If you are considering purchasing a new grill, or barbecue, you will be faced with a multitude of options to choose between. However, there is one choice which you will need to make fairly quickly in your quest for the perfect grill for you. That decision is whether to buy a charcoal or gas grill. Both charcoal and gas grills have advantages over each other depending on what you are looking for and how you intend to use it. However, the good news is that they both produce food which has been found to have very little difference in taste. Whether you choose the gas or charcoal version you can rest assured that they will both have the capability to produce great tasting fare. For many, a barbecue is not a proper barbecue if it does not involve cooking over hot coals. This can take a long time to be at the optimum cooking temperature and can be difficult to master, and in addition there are ashes to be dealt with once the cooking is over. However, the primal instinct in many people (particularly men!) makes the charcoal grill appeal to them as they are required to start and tend the fire for the duration of the time for which they are cooking. In addition, many feel that cooking over coals gives the food a distinctive taste and smell which you do not get with a gas grill. However, as mentioned previously, this has not been found to be the case. A gas grill can make life less complicated. The flames are produced at the touch of a button and the temperature can be controlled at the turn of a knob. This is more like cooking over a traditional kitchen cooker, only outside. A gas grill also removes the debris once the cooking is over as there are no coals to clean up. As you can see, both types of grill have their advantages. However, it is important to think about your use of your grill before making your decision. If you plan to use it infrequently you may prefer a charcoal grill as they are less costly. A gas grill will cost more to buy, but if you are going to use it regularly it will become more efficient over time. For the newcomer to the grill, a charcoal grill may be the most sensible option. If you find you are using it a lot and it is becoming expensive to buy new coals you will then have the opportunity to upgrade to a gas barbecue if you wish. If you splash out for a gas grill immediately you may find that if you use it infrequently it will be an unnecessary expense that you need not have made. Whichever you choose, there is little between the two types of grill in terms of the quality of the food cooked on them. Make your decision wisely and your grill is sure to be enjoyed on many occasions over time and makes a great addition to any summer evening.

    Barbecuing is not what it used to be. When growing up the only time that my family would start up the grill or smoker was in the summer and on the weekends. Today, people barbecue every night and all year round. Barbecue sauces have come along way since then as well. There used to be only a couple of choices at your local market. But now with the invention of “super” markets the amount barbecue sauces you can buy locally has grown significantly. For those gourmet barbecue sauces the web is probably the only place you will find these unique sauces. If you don’t live in the Alabama area the only place you will find traditional White BBQ Sauce like Big Bob Gibson’s is on the web or of course you can try to make it yourself. In Alabama Barbecue traditional Sauce uses Mayonnaise as its base rather than tomato sauce, vinegar, or any of the other more typical barbecue sauce bases. It is clearly a region favorite. Bob Gibson of Decatur, Alabama is credited with the invention the white sauce back in 1925. Friends and family were first treated to this secret-recipe sauce on chicken and pork at weekend barbecues where boards were nailed to trees for tables. Today, this famous mayonnaise-based condiment is traditionally employed to baste chicken, seafood and pork. White BBQ Sauce is as synonymous with the state with Alabama as the legendary "BAMA" football program. White BBQ Sauce’s intriguing flavor complements salads and is a superb baste for chicken, pork and turkey.     Why do make ahead recipes work so well to reduce your dinner party stress

     

    One of the “tricks” I find most useful for hosting stress-free dinner parties is to make some of the recipes ahead. I find that too many last minute jobs can overwhelm me, so I plan ahead to eliminate as many as possible. The more dishes you can prepare a day or some hours before guests ring your doorbell, the more you reduce your stress. Here are some reasons: • You avoid a last minute crisis if preparation takes longer than you thought it would. • If you like to cook, you’ll have the leisure to enjoy what you’re doing instead of feeling frantic about a deadline • You have time to clean up after you cook. • If there is a disaster, say you burn something, you have plenty of time to come up with an alternate plan. • If you have prepared the dessert ahead, you don’t need to leave the table for a long stretch just when the conversation is getting really interesting. Put your imagination to work for you! Try to imagine your way through the last minute jobs you will have to get dinner on the table, and reduce them to a minimum you feel comfortable with. It helps to think about what all those last minute jobs are: setting out the ice water pitcher, lighting the candles, putting items in serving dishes and getting the guests to the table. By the way, many of these are jobs that your guests can do. What is your level of tolerance for last minute jobs? Now ask yourself what your level of tolerance is for last minute jobs? If it is low, then you should think about finding some recipes that absolutely minimize any last minute work. This is especially true if you are an inexperienced cook. Some of the recipes I rely on are make-ahead, and some are just items that I can bring home from the store and put out in nice serving dishes. Some cooks even make everything ahead. If you love stews, lasagna and casseroles, then you could do that too. But I often prefer serving a delicious roast of lamb or beef or chicken as the special item on the menu. Luckily these dishes are ones you can put in the oven and leave to themselves while you do other things. If you can add potatoes and vegetables to the roast while it cooks you have almost all of the advantages of make-ahead. Once you pop them in the oven beside the roast you can pretty well ignore them until they are cooked. So I tend to focus on finding appetizers, salads, side dishes and desserts that I can make ahead, or set out straight from the store, or vegetables I can cook alongside a roast. Then I can concentrate on the last minute items like slicing a roast, making gravy, and getting things on the table. Probably the most important category for me is appetizers. I find it too stressful to be fussing at cooking something while the doorbell is ringing. If you are hosting by yourself you may find the same. So I try to have a repertoire of make-ahead or buy-ahead appetizer recipes that work for me. Often I serve more than one, since some of my guests like to stick to very light appetizers, and others enjoy heartier ones. Most schools offering an associate degree programs in culinary arts require their students to do undergo an internship program before they are allowed to graduate. A culinary arts associate degree holder can find work in hotels and restaurants and in private catering companies particularly in the areas of food production and management of the kitchen. The associate degree course can be credited when the person with an associate degree decides to pursue a four-year course. Interested students can also choose an associate degree in restaurant and hospitality management where they will have hands-on training on the industry’s business aspects, pastry and baking or professional catering where they will learn the intricacies of food preparation and the business aspects of establishing their own catering businesses. The Bachelor’s degree program focuses more on providing management skills as well as culinary arts courses to the students. Some institutions require students who take up the Bachelor’s degree to also take up business management to prepare them for managerial positions in the industry. Among the programs offered under the Bachelor’s degree include management programs for food and beverage, pastry and baking, culinary as well as for hospitality establishments. Those who want to take up short term courses can choose from the certificate and diploma programs in the areas of pastry and baking, cooking, managing a restaurant and culinary arts. These programs can be easily completed in several weeks and is ideal for those who are already gainfully employed but who lack formal training. If you enjoy cooking and other people also enjoy what you cook for them, then you may just have the potential of becoming a good cook or baker or perhaps, the owner of a restaurant someday. Learn the basics of culinary arts and restaurant management by enrolling in culinary schools. Who knows, this may be the beginning of a good business venture or a lifelong hobby.

    Okay, now I need to ask do you find yourself making the same meals over and over and over? It seems like I get in a rut and fix the same foods on a rotating scale. Granted I have picky eaters in my family but not that picky. I decided to do something about it. After reflecting on it for awhile I discovered the biggest problem with cooking supper was deciding what to make so I got out a notebook and started writing down meal ideas complete with side dishes. I even asked friends and family occasionally what they were having for dinner to get more ideas. I had my daughter give me ideas too for her favorite meal choices and side dishes. She did a good job of coming up with things I hadn't even made in a long time. I found that asking her when she was hungry seemed to help her creative juices come up with more ideas. Now each week I have my little notebook of meal ideas and I decide on 8 of them and go shopping for the ingredients to make them. I then make a list and put it on the board of the 8 different menu choices and cross them off as I make them. At the end of the week there is always one meal left over, I often find I didn't make it because someone doesn't like it much or it takes too long to prepare. I then make a little note in my notebook saying cook this when so and so won't be home, or only put this on the supper list when you know you have time to make it. I find I don't dread cooking supper nearly as much, I have eliminated the quick run to the grocery store before making supper, and have made my life much simpler when it comes to cooking supper.

In a large roasting pan, mix together the water, bouillon powder, garlic powder, onion powder, poultry seasoning, parsley, and paprika. Place turkey breast side down in the roasting pan. Scoop the pan mixture over the turkey. Cover tightly with foil and place on grill. Grill 3 to 4 hours, until the internal temperature of the thigh reaches 180F. Remove turkey from grill and let stand 15 minutes before carving. Smoked Turkey 1 turkey 8 to 22 lbs., fresh or completely thawed Sweet Pickle Brine (recipe to follow) Maple syrup Sweet Pickle Brine: 1 gal. water 2 1/2 cups salt, rock, pickling or canning salts are recommened 1/3 cup of light brown sugar 1 tablespoon Lquid garlic 1 oz. pickling spices Mix well. You may need to adjust the amounts depending on the size of your bird. This recipe should suit you fine for an 8 to 12 lb. turkey. Rinse turkey thoroughly with cold water, drain and pat dry. Prepare sweet pickle brine. Brine turkey according to the following schedule, 8 to 12 lb. bird 3 days, 13 to 16 lb. bird 4 days, 17 to 22 lb. bird 5 days. Remove from brine; rinse thoroughly in cold water and pat dry. Allow to dry in refrigerator for 24 hours. Lock wings behind back and tie legs and tail together. Baste turkey with maple syrup before putting in smoker and every 2 hours while smoking. Position turkey on cooking grill. Smoke cook until done. The best way to determine doneness is to insert a meat thermometer into the thickest part of the turkey (the breast) the internal temperature should read 180 degrees F. Smoking food is more an art than a science; this recipe is not intended for the novice. Allot of factors go into determining the cooking time for a particular food when smoking. Cool turkey in the refrigerator for 24 hours before serving to enhance the smoked flavor. You may serve the turkey right away if you wish.

         
    3 Ways to cook the perfect rice

     

    Rice may be cooked by 3 methods, each of which requires a different proportion of water. These methods are boiling, which requires 12 times as much water as rice; the Japanese method, which requires 5 times as much; and steaming, which requires 2-1/2 times as much. Whichever of these methods is used, however, it should be remembered that the rice grains, when properly cooked, must be whole and distinct. To give them this form and prevent the rice from having a pasty appearance, this cereal should not be stirred too much in cooking nor should it be cooked too long. BOILED RICE - Boiling is about the simplest way. Properly boiled rice not only forms a valuable dish itself, but is an excellent foundation for other dishes that may be served at any meal. The water in which rice is boiled should not be wasted, as it contains much nutritive material. This water may be utilized in the preparation of soups or sauces, or it may even be used to supply the liquid required in the making of yeast bread. BOILED RICE (Sufficient to Serve Eight) 1 c. rice ; 3 tsp. Salt; 3 qt. boiling water Wash the rice carefully and add it to the boiling salted water. Boil rapidly until the water begins to appear milky because of the starch coming out of the rice into the water or until a grain can be easily crushed between the fingers. Drain the cooked rice through a colander, and then pour cold water over the rice in the colander, so as to wash out the loose starch and leave each grain distinct. Reheat the rice by shaking it over the fire, and serve hot with butter, gravy, or cream or milk and sugar. JAPANESE METHOD - Rice prepared by the Japanese method may be used in the same ways as boiled rice. However, unless some use is to be made of the liquid from boiled rice, the Japanese method has the advantage of being a more economical way of cooking this cereal. JAPANESE METHOD (Sufficient to Serve Eight) 1 c. rice ; 1-1/2 tsp. Salt; 5 c. boiling water Wash the rice, add it to the boiling salted water, and boil slowly for 15 minutes. Then cover the utensil in which the rice is cooking and place it in the oven for 15 minutes more, in order to evaporate the water more completely and make the grains soft without being mushy. Serve in the same way as boiled rice. STEAMED RICE - To steam rice requires more time than either of the preceding cooking methods, but it causes no loss of food material. Then, too, unless the rice is stirred too much while it is steaming, it will have a better appearance than rice cooked by the other methods. As in the case of boiled rice, steamed rice may be used as the foundation for a variety of dishes and may be served in any meal. STEAMED RICE (Sufficient to Serve Six) 1 c. rice; 1-1/2 tsp. Salt 2-1/2 c. water Wash the rice carefully and add it to the boiling salted water. Cook it for 5 minutes and then place it in a double boiler and allow it to cook until it is soft. Keep the cooking utensil covered and do not stir the rice. About 1 hour will be required to cook rice in this way. Serve in the same way as boiled rice. Good luck.     4 Types of tea how is each one made

     

    Tea is one of the most popular after food drinks in the world, but still very few people are aware that there are four inherently different flavours and types of tea one can find in every supermarket. Each tea is made out of different ingredients and each tea has its advantages and disadvantages. I will explain. What you should always remember is that there are only four types of tea. 1) Black tea 2) Green tea 3) White tea 4) Oolong tea All these are made from the leaves of the Camellia sinensis, also known as the tea plant. Other herbal infusions such as chamomile tea, ginger tea or red tea made of rooibos leaves are disqualified as types of tea since the tea plant is not involved in their making. The difference between the four tea variations lies in the process of making them. In addition, each type of tea has another flavor and various health benefits. 1) Black Tea The strong flavored burnt Sienna colored hot beverage is the most popular type of tea in the West. Either served with a squeeze of lemon or added milk and a cube of sugar, the cup of black tea is part of daily tea ceremonies that take place worldwide. Black tea is made of heavily oxidized Camellia sinensis leaves. When served plain, it contains no calories, carbohydrates, or fats. A cup of black tea contains more caffeine than any other types of tea but less than in any cup of coffee. 2) Green Tea The lightly oxidized tea has been popular in China, Japan and Korea for centuries. Recently, rumors on its health benefits increased its popularity in the West as well. It has been proven that drinking green tea can lower cholesterol, prevent cancer, increase metabolic rates and be helpful in variety of other conditions and illnesses. The green tea is lightly oxidized, dried, but not fermented. It is usually served plain, without sugar or milk. Since some of the green tea variants taste a bit bitter, it should be brewed in lower temperature than the boiling point. 3) White Tea White tea is rarer and more expensive than the other types of teas mentioned above. Originated in the Fujian province of china, the white tea is made of young Camellia sinensis leaves, which go through a long process of steaming or frying, inactivate fermenting and drying. Since the leaves are harvested while the buds are still covered by white hair, it is called white tea. White tea has the most delicate, sweet taste than the other types of tea. Moreover, it contains the smallest amount of caffeine and the largest amount of antioxidant that help prevent cancer. 4) Oolong Tea The traditional Chinese tea is the common companion of Chinese foods such as dim sum and chop suey in American Chinese restaurants. The oolong tea, black dragon in Chinese, got its name after its long, dark distinguished leaves that look like wild black dragons when brewed. The unique taste of the oolong tea is achieved by a long process that includes sun drying of the Camellia sinensis leaves, light oxidization, cooling and drying processes. The result is a lighter flavor than the popular black tea and stronger than the delicate green tea.

Entertaining backyard activities include creating an outdoor canvas to paint on or playing backyard bowling with household items. 5) Mom said not to play with your food, but there’s always an exception! Barbecue games are great fun and tasty at the same time. In the game Glutton, each player gets a certain amount of mashed potatoes, macaroni and cheese or any other side dish. Various kitchen utensils are put in a box and the players blindly pick a few. On the go, they begin to eat their dish with the items that they took out. The first to finish his or her food wins the prize! Finally, don’t fret! Far too many people get lost in the details of planning the perfect barbecue party and forget to enjoy the social atmosphere and delicious food.     8 Simple commonsense cooking tips

     

    Do you get lumps in your white sauce? When making white sauce (bйchamel) or any sauce that requires slow cooking to thicken use an egg whisk and you can increase the temperature (not too much though) to speed the process up. and you wont get any limps in it. Turn your open barbeque into a gourment oven. Want to try a new barbeque recipe that requires a hood on the barbeque which you may not have. Try using a wok lid or any domed lid. This works very well indeed. Great for roasted meats when camping out. Never buy frozen pastry again. Do you hate making short pastry. Use a kitchen whiz instead of the usual hand method. Use slightly less liquid than may be asked for in the recipe. Just run the whiz until all the pastry forms into a ball. If it wont form into a ball you may need just a touch more liquid. The liquid depends on what recipe you use for your pastry. Do your scones look more like rock cakes ? Make your scones in a kitchen whiz. Many people just can't make scones no matter what. Usually the problem is too much handling. Using the whiz eliminates this problem. Also try and make your scones as though people or the family are sitting at the table waiting. In other words the less time you take means less handling. The mixture should be quite moist not dry after you add the milk. Turn onto a well floured board and top a few times with the tips of your fingers to draw the extra four in. This should only take you about 5-8 seconds. Gently pat into shape and cut into whatever shaped scones you want - round or square - whatever. Scones seem to come out best when cooked in what is variously described as a rising oven. In other words turn your oven on not too long before you start to mix your scones and when they are put in the oven it still has not quite reached the required temperature. I learnt this way of making scones when I was used to crew on a yacht when I was younger and the guys would want morning tea and see if they could cajole me into making some. Hence my reference to having a waiting audience. The oven was only a small benchtop gas oven and I would turn it on to its maximum temperature and then throw the flour butter and milk together. They were most impressed and I was most surprised at the result. I was not at all sure of my expertise in scone making as my mother could never make scones - hers were the ones that came out like bullets. I did later convert my mother into making scones in the kitchen whiz when she was around 65 and she was amazed that she finally learnt to make a scone that was edible. I might add that scones became a regular morning tea item Are your curries chewy? Do you have trouble working out if a casserole or curry is cooked. When the oil (fat) rises the dish is cooked. All meat dish casseroles have some fat content and when this is released the meat is cooked. Are you missing the magic ingredient? Have you ever cooked a curry or casserole and the flavour just needs a little something and you cant quite work out exactly what is needed. Maybe it seems as though the flavours don't quite go together. It is a small intangible ingredient that is lacking. Try a very small amount of sugar and you will be surprised how it seems to blend and mellow the flavours into a more harmonious combination. The flavours will cease to fight against each other. Whoops have you ever slipped with the salt pot when cooking? Have you ever added just a touch too much salt to a recipe. Never add sugar to correct this try a squeeze of lemon juice. I hate washing roasting pans. Do you like to have roasted potatoes occasionally but hate washing up the pan afterwards. Here is a simple easy method and it uses less fat. Cut each potato with the skin on, in half so that you have the largest cut area. Add a little margarine and spread it on the cut side of the potato. Then sprinkle with salt and pepper if you want. Place the buttered potatoes buttered side down on a sheet of aluminium foil wrap. Fold the foil and seal. Add to a preheated hot oven 200 degrees centigrade and cook for approx half an hour. When cooked unwrap and gently peel the foil off the potatoes and serve. Throw the foil in the garbage and voila - lovely scrisp roasted potatoes and no mess.

Cooking several meals for the week at one time. Try cooking a roast and using part of it as a main meal and then using some for sandwiches, beef stroganoff or as part of a stir-fry. Fry several pounds of hamburger and make a casserole, taco meat and chili to freeze for use later in the week. 2. After you return home from the grocery store clean all the fruits and vegetables you can. When it’s time for a meal all you will have to do is cook them or add them to a salad or soup. 3. Get ideas from the cooking shows on T. V. There are great shows that show you how to make a healthy meal in a short time. 4. Develop a revolving recipe file. If you get bogged down by the idea of having to plan 30 meals a month the recipe file is for you. Let family members choose some of their favorites and put the recipes in a monthly file. Flip to day five or fifteen and there is the meal just waiting to be cooked. 5. Enlist the help of the members of your family. As soon as the kids are old enough divide up the cooking responsibilities. Let everyone take turns with specific tasks or the whole meal. Pair these meals with fruit and veggies that have already been washed and cut-up and you are ready for dinner. 6. Share the cooking with friends or neighbors. I’ve known people who cook four or five of the same meal and then trade with four or five other people. This works best when people share the same basic ideas on what they like and don’t like. It’s a great idea though for a very easy week of evening meals. 7. Save coupons for those convenience things at the grocery store. They have entire entrees and dinners either fresh or frozen. Sometimes they are rather pricy but with the coupons they are good to have on hand for an evening when everyone is running in different directions and time is of the essence. 8. It’s O. K. to eat out from time to time. Clip coupons for these occasions and if you have kids keep a look-out for the places that have special prices for children. Some of the fast-food restaurants are trying to offer item choices that are a little more healthy. 9. Many larger cities have businesses that prepare food for the evening meal. They seem expensive at first but are so convenient and available for one person or entire families. There are many menu choices and meals cooked for special diets. When you calculate the groceries you buy and the times you eat out each week, this may work for you. 10bine several of the above ideas into a plan that is best for you. Today, the method most commonly used is in fact broiling: cooking at 475-700*F in much less time. 5) According to the Barbecue Industry Association, half of all marshmallows eaten in the U. S. have been toasted over a grill. 6) For an easy way to check how much propane you have left, bring your bathroom scale outside and weigh the gas tank. 7) The origin of the word barbecue is unclear. Some believe it came from the American-Indian word barbacoa for a wood on which foods were cooked. Others say it came from the french words “de barbe а queue,” meaning “whiskers to tail.” 8) To add a smokey flavour to your gas-grill-cooked foods or foods cooked inside the house, use “liquid smoke.” A condensation of actual smoke, this product can be easily added to your barbecue marinade or sauce. 9) Brisket, the extremely hard cut of meat taken from a cow’s chest, takes one to two hours per pound to barbecue.
