Given that produce loses nutrients quickly, a recently harvested crop is preferred for its ripeness alone. SAFER Local food is often safer, too. Even when it’s not organically grown, small farms tend to be less aggressive than large factory farms about using chemicals. While biotechnology companies have long been experimenting with genetically altered produce, small local farmers do not have access to these seeds and most would not use them even if they did have access to these seeds. In addition to the lower cost needed to support rural areas, they also help to clean 12-14% of the carbon emitted by vehicles and industry. By continuing to support local growers today, you are ensuring that they will be around tomorrow. In fact more and more non-chain grocers are carrying locally grown products. They must, it’s what consumers are demanding. Try buying local flavors. You have nothing to lose and so much to gain.

         
    Szechwan cuisine

     

    The cuisine of the Western region of China is well-known for its spiciness, but many Western palates overlook the complex interplay of savory, sour, hot and sweet flavors that underlie the fiery spice of the Szechwan pepper and other spices that give the Szechwan cuisine its characteristic burn. For decades, most of the world was familiar mainly with Cantonese cuisine, and thought of it as ‘Chinese cuisine’. In reality, though, China is an enormous country that encompasses nearly every kind of climate imaginable. The amazing variety of foods, spices and climates have led to many distinct styles of Chinese cuisine. Szechwan cuisine, originating in a steamy, sub-tropical climate, includes smoked, pickled and spiced foods, as well as foods spiced with a heavy hand for both preservation and flavor. While the Szechwan pepper, a fruit that grows in the Chongging province, has always been used in Szechwan cooking, most agree that it wasn’t until Christopher Columbus brought the chili back from his travels. Besides the flavors that sear the mouth, Szechwan cooking uses an interplay of flavors to create the full impact of a dish. Hot and Sour Soup, for instance, when prepared properly is neither exclusively hot, nor ultimately sour. Prepared with sorrel, lemongrass, tofu and other spices, its first impression is the heady, rich scent of roast meat and sour lemon. That aroma is belied at the first touch on the tongue – the soup is salty first, though not intensely so. The subtle blending of flavors melds, changing in the mouth to mildly sour – the sorrel and lemongrass making themselves known. It is not until the mouthful of soup has been swallowed that the fire sets in as the chili oil finally seeps into the taste buds. This is not unusual for Szechwan cooking. The first mouthful of Kung Pao chicken seldom brings tears to your eyes. It is only as you chew and swallow and take yet another bite that the true heat of the dish begins to assert itself. Double Cooked Spicy Pork seems almost bland at first, with the flavors blending subtly in the background until the intense fire of the chili oil in which the pork is fried suddenly flames in your mouth. There’s more than fire to Szechwan cuisine though. Smoked meats are common, and the smoking often makes use of unusual materials and flavors. Szechwan Tea-Smoked Duck is a delicacy that combines the flavors of citrus and ginger and garlic, juxtaposing them with a long, slow cooking over a fire laced with oolong and green tea leaves. The result is a succulent meat that melts in the mouth and leaves behind a hint of gingered orange. One tradition of Szechwan cuisine that is becoming more common in the Western world is the Szechwan Hot Pot. Similar to a ‘fondue’, a Hot Pot is more an event than a meal. Chunks and slices of raw meat, seafood and vegetables are offered to diners at a table that holds a ‘Hot Pot’ – a pot of chili oil over a flame. Each diner selects their food and dips it in the chili oil until it is cooked. Often, hosts will also offer a pot of simple broth for those guests who prefer a more bland meal, or can’t tolerate the spiciness of food fried in chili oil. Savory, rich and spicy, Szechwan cuisine is cuisine based on intensity – intensely hot, intensely sour, and intensely delicious.

    The Wonderful Tools of Cooking Far too often people overlook the importance of using the proper tools when cooking fine meals. While there is nothing in the world that can quite compare to cooking with the finest and freshest of ingredients, these things can only be enhanced by making use of the perfect tools for the job at hand. When it comes to pots and pans and skillets you should keep in mind that conductivity is of extreme importance. You should also select pots and pans that are made of a heavier gauge. This allows your pans to heat evenly avoiding hot spots, which can lead to food that may 'stick' to your pan or scorch during the cooking process. This means that simply stopping in at your local mass market retailer and purchasing any old set of pots and pans is probably not the best course of action for the best possible quality in your kitchen. Kitchen knives are also important ingredients in the kitchens of today. If you plan to prepare many meals in your kitchen, then the quality of your knives is of the utmost importance. Your knives are an investment you shouldn't have to make too often in your lifetime. For this reason, select a really good set and be prepared to make a sizeable investment in your knives. You will never understand, unless you've tried to prepare foods with knives of inferior quality, just how important it is to purchase good quality and well-balanced knives for your kitchen. You should also try the handles in your hand to see how comfortable they feel before purchasing a set of knives. If you do a lot of chopping and cutting during your meal preparation and cooking you will want to make sure that the knives you are using feel comfortable in your hands. If you are like me and plan on cooking a great deal of meat then you should also invest in a jacquard. This useful tool helps not only when it comes to tenderizing rather rough and tumble cuts of meat but also pierces the surface so that rubs and marinades can penetrate for a more flavorful experience. This is by far one of my favorite kitchen gadgets and it isn't a sizeable investment for the added value it provides to meals. A good quality grater is another tool that no kitchen should be complete without. There are many who feel that with all the pre shredded cheese products on the market today this tool is obsolete but nothing could be further from the truth. First of all, pre grated and pre packaged cheese simply doesn't touch the quality of flavor that freshly grated cheese provides. Second, cheese isn't the only thing that these graters are useful for grating. Graters are excellent tools for grating citrus fruits, spices, garlic, chocolate, and even onions. If you do a good deal of baking in addition to your cooking you should not overlook the value of having a quality grater in your kitchen. Of course there are many more cooking tools than I could possibly mention here. Those mentioned above simply happen to be among my personal favorites. There are all kinds of appliances that in my humble opinion no kitchen is truly complete without. In addition to these great appliances there are many tools that are simple matters of preference. Do you peel enough potatoes to warrant a special device for doing so or do you simply opt to purchase an ergonomically designed potato peeler and peel them by hand? There are no one size fits all answers when it comes to kitchen tools and many of us are often limited by serious budget constraints and restrictions. My best advice if this is the situation for you is to purchase the best possible quality you can afford and build from there. Even if it means replacing one pot or knife at a time until you can manage a complete set of superior quality cooking tools you will find it well worth the price you've paid in the long run. 682

         
    The almighty beer can chicken

     

    : A popular method of cooking chicken in recent years both in Barbeque contest as well as backyard barbeques is the beer-can chicken. Cooking a beer-can chicken couldn’t be any easier but the results are worthwhile. This is a technique that delivers a moist, succulent chicken and flavorful chicken. It’s also a bit of a showstopper and makes a lively conversation starter as well. Is it chicken in a beer can? Close but try beer can in a chicken. The beer is used to both keep the bird flavorful and moist, and the cook happy. By the time the bird is ready to eat, the chef will not be the only one with a beer belly! Is it safe to eat chicken that has been in contact with the ink from a beer can? When the FDA was asked this question they were not sure because they have only tested the cans as a container and not as a cooking utensil. However the ink on the cans is applied at a temperature in excess of 500 degrees while the can never get hotter then 215 degrees during the cooking process. The conclusion by most is that there is nothing harmful in using the cans. For those cooks who still worry about possible contamination, vertical stainless steel chicken roasters are available. These roasters have their own reservoir for beer, water or your choice of liquid. 1 whole chicken 2 tablespoons vegetable oil 2 tablespoons salt 1 teaspoon black pepper 3 tablespoons of your favorite dry spice rub 1 can beer Preparing the chicken Remove and discard neck and giblets from chicken. Rinse chicken inside and out, and pat dry with paper towels. Rub or brush the chicken lightly with oil then season inside and out with salt, pepper and dry rub. Open a can of beer and drink half. Wait 5 minutes then drink the other half and open a second can for the chicken. Drink half of the second beer and reserve remainder of beer for the bird. Using a "church key"-style can opener, pop a few more holes in the top of the can so that the moisture will be able to escape. With the can on a steady surface, lower the chicken onto the can. It should stand on it’s own using the legs and can as a tri-pod. Refrigerate the bird while you get your grill or smoker setup. Preparing the grill Whether you intend to grill or smoke the bird, the goal is indirect heat. No coals or burner directly under the chicken. Place a drip pan under where you intend the bird to sit. If you are grilling, turn the burners to medium-high on one side of your grill and place the bird on the other side. Cooking the chicken Continue to cook the chicken over medium-high with the grill cover on for approximately 1 1/4 – 1 1/2 hours. The chicken will be done when the internal temperature registers 165 degrees F in the breast area and 180 degrees F in the thigh. Remove from grill with tongs and move to cutting board. Be careful not to spill the beer when removing the can. Let the chicken rest for 5-10 minutes before carving. Toss the beer can out along with the carcass.

Season your batter to your heart's content, salt and pepper never goes wrong. You may want to try other herbs and spices with the batter for a more delicious fish. 2.Grilling At first glance, grilling would seem to be the easiest way to handle your fish. A newbie might assume that grilling fish is the same as grilling steaks or burgers. Unlike fowl or cattle, fish tends to secret most of its own juices when cooked.     Open an old Italian cookbook, browse through the index and… surprise! No Tiramisu’ cake recipe. My first encounter with Tiramisu’ was in 1985. I was in Italy at that time: A friend of mine told me about this new cake recipe she got. She was so enthusiastic about it that I felt compelled to try it immediately. The taste was unbelievably good, as never I had tasted before. Since then I fell in love with this dessert. Everybody knows by now that Tiramisu’ means “pick-me-up” in Italian, for the high energetic content (eggs and sugar) and the caffeine of the strong espresso coffee. There are many different stories about the origin of Tiramisu’. It is a layered cake; therefore some people place its origin in Tuscany, where another famous layered Italian dessert is very popular. It is called “Zuppa Inglese” (English Soup). It is not English and it is not a soup. Instead is a simple cake of ladyfingers or sponge cake, soaked in “alkermes” liquor, and alternated layers of chocolate and egg custard. Layered cakes have been around for long time. The brilliant idea in Tiramisu’ is not in the technique of layering, but in the components. The great invention of combining together coffee, zabaglione cream, and chocolate: This is the true innovation in Tiramisu’. I love to study history of food. In my book “The Timeless Art of Italian Cuisine – Centuries of Scrumptious Dining”, there is extensive information about culinary history of the various regions of Italy. I tried to trace the origin of Tiramisu’ investigating many Italian cookbooks. The first clue is by the famous Italian gastronome Giuseppe Maffioli. In his book “Il ghiottone Veneto”, (The Venetian Glutton) first published in 1968, he talks extensively about Zabaglione custard. The name of this cream originates from Zabaja, a sweet dessert popular in the Illiria region. It is the coastal area across the Adriatic Sea that was Venetian territory for long time during the golden age of the “Repubblica Serenissima” (The Most Serene Republic) of Venice. Zabaglione was prepared in those times with sweet Cyprus wine. “The groom’s bachelor friends”, says Maffioli, “at the end of the long wedding banquet, maliciously teasing, gave to him before the couple retired a big bottle of zabajon, to guarantee a successful and prolonged honeymoon”. “The zabajon”, Maffioli continues, “was sometimes added of whipped cream, but in this case was served very cold, almost frozen, and accompanied by the baicoli, small thin Venetian cookies invented in the 1700’s by a baker in the Santa Margherita suburb of Venice”. The addition of whipped cream, the serving temperature, the cookies, all these elements are close to the modern Tiramisu’ recipe. And even the allusion to the energetic properties of the Zabaglione, seem to refer to the Tiramisu’ name. Later in my research the oldest recipe I could find was in the book by Giovanni Capnist “I Dolci del Veneto” (The Desserts of Veneto). The first edition was published in 1983 and has a classic recipe for Tiramisu’. “Recent recipe with infinite variations from the town of Treviso”, says Capnist, “discovery of restaurants more then family tradition”. But the final word on the origin of Tiramisu’ is from the book by Fernando e Tina Raris “La Marca Gastronomica” published in 1998, a book entirely dedicated to the cuisine from the town of Treviso. The authors remember what Giuseppe Maffioli wrote in an article in 1981: “Tiramisu’ was born recently, just 10 years ago in the town of Treviso. It was proposed for the first time in the restaurant Le Beccherie. The dessert and its name became immediately extremely popular, and this cake and the name where copied by many restaurants first in Treviso then all around Italy”. Still today the restaurant “Le Beccherie” makes the dessert with the classical recipe: ladyfingers soaked in bitter strong espresso coffee, mascarpone-zabaglione cream, and bitter cocoa powder. Alba and Ado Campeol, owners of the restaurant regret they didn’t patent the name and the recipe, especially to avoid all the speculation and guesses on the origin of this cake, and the diffusion of so many recipes that have nothing to do with the original Tiramisu’. I tried countless different recipes form the infinite variations of Tiramisu’, but the classic one, (the recipe I show on my website), the recipe from the “Le Beccherie” restaurant, is still the one I prepare today and the one I prefer.     The importance of food elements

     

    The purposes of food are to promote growth, to supply force and heat, and to furnish material to repair the waste which is constantly taking place in the body. Every breath, every thought, every motion, wears out some portion of the delicate and wonderful house in which we live. Various vital processes remove these worn and useless particles; and to keep the body in health, their loss must be made good by constantly renewed supplies of material properly adapted to replenish the worn and impaired tissues. This renovating material must be supplied through the medium of food and drink, and the best food is that by which the desired end may be most readily and perfectly attained. The great diversity in character of the several tissues of the body, makes it necessary that food should contain a variety of elements, in order that each part may be properly nourished and replenished. The Food Elements. The various elements found in food are the following: Starch, sugar, fats, albumen, mineral substances, indigestible substances. The digestible food elements are often grouped, according to their chemical composition, into three classes; vis., carbonaceous, nitrogenous, and inorganic. The carbonaceous class includes starch, sugar, and fats; the nitrogenous, all albuminous elements; and the inorganic comprises the mineral elements. Starch is only found in vegetable foods; all grains, most vegetables, and some fruits, contain starch in abundance. Several kinds of sugar are made in nature's laboratory; cane, grape, fruit, and milk sugar. The first is obtained from the sugar-cane, the sap of maple trees, and from the beet root. Grape and fruit sugars are found in most fruits and in honey. Milk sugar is one of the constituents of milk. Glucose, an artificial sugar resembling grape sugar, is now largely manufactured by subjecting the starch of corn or potatoes to a chemical process; but it lacks the sweetness of natural sugars, and is by no means a proper substitute for them. Albumen is found in its purest, uncombined state in the white of an egg, which is almost wholly composed of albumen. It exists, combined with other food elements, in many other foods, both animal and vegetable. It is found abundant in oatmeal, and to some extent in the other grains, and in the juices of vegetables. All natural foods contain elements which in many respects resemble albumen, and are so closely allied to it that for convenience they are usually classified under the general name of "albumen." The chief of these is gluten, which is found in wheat, rye, and barley. Casein, found in peas, beans, and milk, and the fibrin of flesh, are elements of this class. Fats are found in both animal and vegetable foods. Of animal fats, butter and suet are common examples. In vegetable form, fat is abundant in nuts, peas, beans, in various of the grains, and in a few fruits, as the olive. As furnished by nature in nuts, legumes, grains, fruits, and milk, this element is always found in a state of fine subdivision, which condition is the one best adapted to its digestion. As most commonly used, in the form of free fats, as butter, lard, etc., it is not only difficult of digestion itself, but often interferes with the digestion of the other food elements which are mixed with it. It was doubtless never intended that fats should be so modified from their natural condition and separated from other food elements as to be used as a separate article of food. The same may be said of the other carbonaceous elements, sugar and starch, neither of which, when used alone, is capable of sustaining life, although when combined in a proper and natural manner with other food elements, they perform a most important part in the nutrition of the body. Most foods contain a percentage of the mineral elements. Grains and milk furnish these elements in abundance. The cellulose, or woody tissue, of vegetables, and the bran of wheat, are examples of indigestible elements, which although they cannot be converted into blood in tissue, serve an important purpose by giving bulk to the food. With the exception of gluten, none of the food elements, when used alone, are capable of supporting life. A true food substance contains some of all the food elements, the amount of each varying in different foods. Uses of The Food Elements. Concerning the purpose which these different elements serve, it has been demonstrated by the experiments of eminent physiologists that the carbonaceous elements, which in general comprise the greater bulk of the food, serve three purposes in the body; 1. They furnish material for the production of heat; 2. They are a source of force when taken in connection with other food elements; 3. They replenish the fatty tissues of the body. Of the carbonaceous elements, starch, sugar, and fats, fats produce the greatest amount of heat in proportion to quantity; that is, more heat is developed from a pound of fat than from an equal weight of sugar or starch; but this apparent advantage is more than counterbalanced by the fact that fats are much more difficult of digestion than are the other carbonaceous elements, and if relied upon to furnish adequate material for bodily heat, would be productive of much mischief in overtaxing and producing disease of the digestive organs. The fact that nature has made a much more ample provision of starch and sugars than of fats in man's natural diet, would seem to indicate that they were intended to be the chief source of carbonaceous food; nevertheless, fats, when taken in such proportion as nature supplies them, are necessary and important food elements. The nitrogenous food elements especially nourish the brain, nerves, muscles, and all the more highly vitalized and active tissues of the body, and also serve as a stimulus to tissue change. Hence it may be said that a food deficient in these elements is a particularly poor food. The inorganic elements, chief of which are the phosphates, in the carbonates of potash, soda, and lime, aid in furnishing the requisite building material for bones and nerves. Proper Combinations of Foods. While it is important that our food should contain some of all the various food elements, experiments upon both animals and human beings show it is necessary that these elements, especially the nitrogenous and carbonaceous, be used in certain definite proportions, as the system is only able to appropriate a certain amount of each; and all excess, especially of nitrogenous elements, is not only useless, but even injurious, since to rid the system of the surplus imposes an additional task upon the digestive and excretory organs. The relative proportion of these elements necessary to constitute a food which perfectly meets the requirements of the system, is six of carbonaceous to one of nitrogenous. Scientists have devoted much careful study and experimentation to the determination of the quantities of each of the food elements required for the daily nourishment of individuals under the varying conditions of life, and it has come to be commonly accepted that of the nitrogenous material which should constitute one sixth of the nutrients taken, about three ounces is all that can be made use of in twenty-four hours, by a healthy adult of average weight, doing a moderate amount of work. Many articles of food are, however, deficient in one or the other of these elements, and need to be supplemented by other articles containing the deficient element in superabundance, since to employ a dietary in which any one of the nutritive elements is lacking, although in bulk it may be all the digestive organs can manage, is really starvation, and will in time occasion serious results. It is thus apparent that much care should be exercised in the selection and combination of food materials. Such knowledge is of first importance in the education of cooks and housekeepers, since to them falls the selection of the food for the daily needs of the household; and they should not only understand what foods are best suited to supply these needs, but how to combine them in accordance with physiological laws.

    Blueberry muffins, blueberry cream pies, blueberry cheesecake, blueberry pancake, fresh moist blueberries....just reading the words is enough to evoke that summer-sweet, luscious tang and get your mouth watering. Everyone knows blueberries are delicious, but did you know they're good for your health too? In fact, blueberries have been touted as the cure for a host of serious medical problems including urinary infections, diabetes, high cholesterol levels to Alzheimer's and cancer. First let's look at what exactly blueberries are. Blueberries are the fruit of flowering plants native to North America, now also grown in Australia, New Zealand and some South American countries such as Chile and Argentina.     The missing ingredient

     

    You may not have noticed but there is a certain ingredient missing in the foods we eat which could wreck your life. Take asparagus for example. Now what could be missing? I am a chef, I can help you. I know. I know. Vegetables that are purple are in and you buy your purple passion asparagus farm fresh. None of that stuff that’s transported 1250 miles on average from factory farms to reach the produce shelf, exhausted, at your market. Nope. You get the good stuff, organically grown, from the farmers market and cook it the only approved, right and correct way; you steam it (according to a recent study in the Journal of the Science of Food). Good. Then you sample it and it tastes kina good. So, what’s missing? Maybe, your chef suggests, you add a little Meyers lemon butter, some French sea salt and imported, fresh ground black pepper. Now it tastes really good, you gourmet with a personal chef. But something’s still missing? Now you read the fine print and find out most of the essential nutrient folate or vitamin B9 is just not all there and whatever was there was lost when you cooked it (according to the USDA). And to make matters worse, it doesn’t matter where you bought the asparagus or even if it is purple, white or green. Because the only thing The United States Department of Agriculture knows for sure it that it probably does not have an adequate amount of folate for you in the first place. Read on. All right. So folate is colorless, something you cannot taste and it is something you cannot live without. In fact you and I and whatever colored asparagus you're eating have something in common: none of us can live without folate (Andrew D. Hanson, Horticulture Sciences Department, University of Florida, personal communication). By deduction we know that the asparagus made enough for itself, but maybe not enough for you. So how do you know enough of it there or not there? You don’t, period. Science could tell you, but try and find that answer. Of course you could have a nutrient analysis done before cooking and after cooking and you would find out for sure. But that would set you back a lot of lettuce, if you get my drift. And the asparagus would not plate up very pretty and I would quit as your chef. You say, so what? I knew that was coming. Your life without adequate folate or vitamin B9? If your primary source of folate was asparagus then you could end up putting yourself at risk for a host of devastating health problems. Here’s the short list: heart disease, birth defects, retardation of development (in children) and low levels can lead to anemia in adults along with added risk for colon cancer. Oh, your body absolutely needs folate to make new cells and genetic material. Darn details. But don’t throw out the asparagus, yet. As science built the story of this missing ingredient, study by study, and discovered what happens to us when it is not all there, the Federal Government stepped in to help fix the problem. But first science proved we were not getting enough folate from our natural foods. In fact about 50 or so years ago science proved that food richest in folate is (or was) asparagus, but it is also found in other green leafy vegetables, eggs and beans. All this has been published by the USDA and the FDA. However, in 1998 the Food and Drug Administration began requiring certain grain manufacturers to fortify their foods with folic acid, a synthetic form of folate. And low and behold folate deficiencies are becoming rare, according to nutritionists (that’s what most every licensed nutritionist you can contact would most likely say—contact a few and see). But the levels of folate in our naturally occurring foods are still to low to sustain our health and we must have our diet fortified or suffer the consequences. We know this for sure because science has established it beyond doubt and with agreement of the Federal Government. In addition, no less an authority than Harvard University ( at Harvard’s Department of Public Health) says fresh fruits and vegetables alone cannot provide us with adequate nutrition—we need supplements to fill in the missing ingredients in our foods. So we now know there are ingredients missing from our foods that were there but are not now and we do not know why: the baseline for getting adequate nutrition from our foods has shifted. As your chef I recommend it is probably best to eat your asparagus, steamed and sauced along and pop a vitamin supplement rich in folate (a daily dose of 400 to 800 mcgs is recommended by the FDA—check it out with your doctor before you start). Of course, if you do not like looking for missing ingredients in your foods you can eat some cereal fortified with folic acid and other yummy ingredients.

         
    The perfect pot for every preparation

     

    When it comes to buying good cookware, there are a lot of different options. Some people like to buy a matched set of cookware, but seasoned cooks often like to mix and match making an eclectic set that assures them the perfect finish to every dish they create. It is hard to know what kind of pan works best for what kind of dish, so keep this handy guideline on hand and you will never choose the wrong type of pan for whatever delectable dish you whip up. Aluminum: Aluminum makes for an all around pan that can be used for many things. It takes a little bit of steel wool applied with elbow grease to keep it shining, but the finished product is well worth the effort. A good aluminum pan will provide even heat distribution making it the perfect choice for sautйing of frying food evenly. Stainless Steel: In a perfect world, all of your pots and pans would be stainless steel, but in the real world, their cost is a bit inhibitive to this dream. They are extremely easy to clean with stainless steel cleaner and practically impossible to destroy. You should always purchase stainless steel pans with copper, aluminum, or laminated-steel bottoms. You can also find pans that are clad in aluminum on the bottom and sides, to give an even distribution of heat. Stainless steel pans are the all purpose pan and can be used to cook just about anything. Teflon: Teflon is a coating that is applied to many different pots and pans. Cookware that is coated with Teflon has a non-stick surface making it perfect for frying food without using a lot of oil. Clean up of Teflon coated pans is also very easy because foods don’t stick to the surface. Cooking eggs in a Teflon pan is an easy task because the non-stick surface lets them slide out of the pan and onto your plate without breaking. Teflon does have one problem. If you use a metal utensil to stir your food you could scrape off the Teflon surface causing food to start sticking to your pan. You should always use wooden or plastic utensils with your Teflon. On the upside, Teflon pans are rather inexpensive, so if they do get ruined, they are easy to replace. Cast Iron: Chances are your Grandma had a cast iron pan or two and if you inherited one of her old beauties, the remnants of every meal she ever cooked have been captured in its sturdy coat. Cast iron must be seasoned before you use it for the first time. You season the pan by spreading melted shorting all over its inside and placing it in a warm oven for a few hours. Every so often you swab the oil up the sides of the pan. When you cook in a cast iron pan, you should never wash it with the rest of your cookware. Detergent and rust are the enemies of cast iron. Wash your cast iron pans with a mild soap and dry immediately with a paper towel. It is even a good idea to take the dried pan and place it in the oven so the pilot light can dry up any moisture you missed. Cast iron skillets are fantastic tools for cooking a mouth watering steak. Copper: Copper makes for a beautiful pan, but truthfully most copper pans serve a decorative purpose in the kitchen. They are hard to keep clean and distribute heat poorly. There is one job in the kitchen that is best done in a copper pan or bowl. Egg whites being whipped for meringue come out much more airy and light when whipped in a cooper dish.

         
    The principles of scientific cooking

     

    Proper cookery renders good food material more digestible. When scientifically done, cooking changes each of the food elements, with the exception of fats, in much the same manner as do the digestive juices, and at the same time it breaks up the food by dissolving the soluble portions, so that its elements are more readily acted upon by the digestive fluids. Cookery, however, often fails to attain the desired end; and the best material is rendered useless and unwholesome by a improper preparation. It is rare to find a table, some portion of the food upon which is not rendered unwholesome either by improper preparatory treatment, or by the addition of some deleterious substance. This is doubtless due to the fact that the preparation of food being such a commonplace matter, its important relations to health, mind, and body have been overlooked, and it has been regarded as a menial service which might be undertaken with little or no preparation, and without attention to matters other than those which relate to the pleasure of the eye and the palate. With taste only as a criterion, it is so easy to disguise the results of careless and improper cookery of food by the use of flavors and condiments, as well as to palm off upon the digestive organs all sorts of inferior material, that poor cookery has come to be the rule rather than the exception. Methods of cooking. Cookery is the art of preparing food for the table by dressing, or by the application of heat in some manner. A proper source of heat having been secured, the next step is to apply it to the food in some manner. The principal methods commonly employed are roasting, broiling, baking, boiling, stewing, simmering, steaming, and frying. Roasting is cooking food in its own juices before an open fire. Broiling, or grilling, is cooking by radiant heat. This method is only adapted to thin pieces of food with a considerable amount of surface. Larger and more compact foods should be roasted or baked. Roasting and broiling are allied in principle. In both, the work is chiefly done by the radiation of heat directly upon the surface of the food, although some heat is communicated by the hot air surrounding the food. The intense heat applied to the food soon sears its outer surfaces, and thus prevents the escape of its juices. If care be taken frequently to turn the food so that its entire surface will be thus acted upon, the interior of the mass is cooked by its own juices. Baking is the cooking of food by dry heat in a closed oven. Only foods containing a considerable degree of moisture are adapted for cooking by this method. The hot, dry air which fills the oven is always thirsting for moisture, and will take from every moist substance to which it has access a quantity of water proportionate to its degree of heat. Foods containing but a small amount of moisture, unless protected in some manner from the action of the heated air, or in some way supplied with moisture during the cooking process, come from the oven dry, hard, and unpalatable. Boiling is the cooking of food in a boiling liquid. Water is the usual medium employed for this purpose. When water is heated, as its temperature is increased, minute bubbles of air which have been dissolved by it are given off. As the temperature rises, bubbles of steam will begin to form at the bottom of the vessel. At first these will be condensed as they rise into the cooler water above, causing a simmering sound; but as the heat increases, the bubbles will rise higher and higher before collapsing, and in a short time will pass entirely through the water, escaping from its surface, causing more or less agitation, according to the rapidity with which they are formed. Water boils when the bubbles thus rise to the surface, and steam is thrown off. The mechanical action of the water is increased by rapid bubbling, but not the heat; and to boil anything violently does not expedite the cooking process, save that by the mechanical action of the water the food is broken into smaller pieces, which are for this reason more readily softened. But violent boiling occasions an enormous waste of fuel, and by driving away in the steam the volatile and savory elements of the food, renders it much less palatable, if not altogether tasteless. The solvent properties of water are so increased by heat that it permeates the food, rendering its hard and tough constituents soft and easy of digestion. The liquids mostly employed in the cooking of foods are water and milk. Water is best suited for the cooking of most foods, but for such farinaceous foods as rice, macaroni, and farina, milk, or at least part milk, is preferable, as it adds to their nutritive value. In using milk for cooking purposes, it should be remembered that being more dense than water, when heated, less steam escapes, and consequently it boils sooner than does water. Then, too, milk being more dense, when it is used alone for cooking, a little larger quantity of fluid will be required than when water is used. Steaming, as its name implies, is the cooking of food by the use of steam. There are several ways of steaming, the most common of which is by placing the food in a perforated dish over a vessel of boiling water. For foods not needing the solvent powers of water, or which already contain a large amount of moisture, this method is preferable to boiling. Another form of cooking, which is usually termed steaming, is that of placing the food, with or without water, as needed, in a closed vessel which is placed inside another vessel containing boiling water. Such an apparatus is termed a double boiler. Food cooked in its own juices in a covered dish in a hot oven, is sometimes spoken of as being steamed or smothered. Stewing is the prolonged cooking of food in a small quantity of liquid, the temperature of which is just below the boiling point. Stewing should not be confounded with simmering, which is slow, steady boiling. The proper temperature for stewing is most easily secured by the use of the double boiler. The water in the outer vessel boils, while that in the inner vessel does not, being kept a little below the temperature of the water from which its heat is obtained, by the constant evaporation at a temperature a little below the boiling point.
