Rio de Janeiro has the world famous beaches of Ipanema and Copacabana with Sugar Loaf as a rugged mountain backdrop. Since Rio is a large city, it boasts five star hotels, fine dining and many nightlife options. Another holiday destination south of the equator is Australia. The Gold Coast is full of sun and sand options and the cities of Sydney and Melbourne have a European feel. If you’re up for some adventure then visit the interior and explore the outback. Southeast Asia is a popular destination due to its affordability and richness in culture. Singapore is not only full of sights, luxury hotels and culture but it is known for being a very clean country. Malaysia has many white sand beaches and islands with accommodations ranging from simple bungalows to lavish resorts. Thailand is another country brimming with ancient sights and gorgeous beaches and its people are known for their hospitality.     Sonoma and Napa Counties are known for its fine wines. The golden sun and the abundant soil yield luscious, flavorful grapes. These are then carefully fermented and blended with closely guarded secrets that have been passed on from generation to generation, and perfected—like wine itself—through time. Visitors to Sonoma and nearby Napa County can arrange wine tours where they can visit different vineyards and learn at least some of the techniques and technology that goes into each bottle. Each label has its own secret, and its own philosophy. For example, wines can use different kinds of grapes, and vineyards can hold as many as 20 different kinds, each baptized with very poetic names: Petite Syrah, Grenache, Bouschet. Winemakers study the flavor, acidity, color, fruit intensity, and tannin structure of each grape—which all contribute to a blend’s appearance, complexity and taste. The winemaker’s skill is seen in the delicate orchestra of flavors, as unique to the winery and to the harvest year as a fingerprint. Some wineries will maintain “genetic libraries” of grapes, which contain different cross-breeding of varieties that allow the experts to experiment with the flavors. This also allows them to employ a technique called micro-vinification. Essentially, the property is divided into vineyard blocks, each planted with a different kind of grape to yield a greater diversity of flavors, aromas, colors and textures. Soil, fertilization, irrigation and time of planting and harvest can also yield different flavors from a single variety of grape. For example, some vineyards believe that it’s better to minimize irrigation, since it dilutes the intensity of the fruit. This is called “dry farming.” This must be balanced, of course, with the plant’s need for moisture—hence the need to choose an area where the roots can mine the water efficiently. The flavor can also change according to when the grapes are picked, and the wine experts carefully study the optimum time of harvest. For example, the Zinfandel grape is an early ripener, and must be fermented two weeks before the other grapes that go into what wine aficionados call “Mixed Blacks.” The grapes must be hand-picked and then put through a special pressing process that preserves the skins and phenolic bitterness. Then, experts must gauge the length of the fermentation process based on the grape’s ripeness and inherent amount of sugar. These are then put into barrels. Many wineries boast of using only the finest containers, such as 100% French oak, which carry the wines for several months before they are bottled by hand. The bottling itself must be done with great precision and gentleness, and the challenge is to minimize the amount of sulfites and other foreign matter. Some of the wineries use century old techniques, with delicate tools that tap gravity. These are just some of the secrets of Sonoma and Napa wines. However, to truly understand the science and art of winemaking, it’s best to arrange a tour of the different vineyards. Many of the tours include a “palate class” where experts will point out what flavors to watch out for in each glass, and how to pair a wine with different kinds of food. When visiting a wine tasting room consider yourself a guest. The owners and staff are proud of their facility and wines. They want everyone to enjoy their visit. Expectations in tasting rooms are different than at wine festivals or in busy bars. After visiting 125 wineries in the last nine months and talking with numerous wine hosts and visitors, we have created a selection of ideas to keep in mind when visiting a winery and vineyard. The atmosphere in a winery tasting room is one of a subtle sophistication. While shorts and athletic shoes are acceptable so are semi-dress clothes. Do not arrive at the winery chewing gum. Gum will distort the taste of wine. Heavy perfume and aftershave will also not permit you or others near you to taste the wine effectively. Sense of taste is highly influenced by the sense of smell. Loud outside voices are not appropriate. Conversational tones are perfect and fit in well with talking about the wines you taste and meeting others who have common interests. Tasting rooms can be crowded on weekends. Weekdays are generally slower and wine hosts have more time to talk about the wines you taste. In either case, if the tasting room is busy, do not elbow your way to the tasting bar. On busy days, some wineries will set up tasting tables or bars outside the tasting room. Give yourself plenty of time at a winery. Relax and enjoy the wine tasting and the ambiance of the tasting room. If the tasting counter is busy, consider stepping back to discuss wine with other like-minded people. This gives others room to step up for a tasting. Many wineries have gift selections to browse while tasting wines. Take your time tasting and browse the displays. The tasting representative pours the tastings in a particular order based upon the style of wine. If you choose not to drink a particular wine that’s fine. Gently cover your wine glass with your fingers to indicate you do not want to taste a wine. It is so much more subtle than declaring, “I don’t like that wine.” Not all wine drinkers like all wines and wine hosts understand. Visitors do not need to announce to everyone that they dislike a particular wine. Another major faux pas is to pick up a bottle and pour your own tasting. Allow your wine consultant to pour the wine. Many wineries will offer to sell you a glass of wine if you would like more. If you ask to taste a wine for a second time, it is a common courtesy to buy a bottle of the wine. What should you do with the wine in your glass you have tasted? If you do not want to drink or taste the rest of the wine in your glass, you can pour it into a spit bucket. It is perfectly acceptable. In addition, it is a good idea to spit your wine into the bucket. Even though tastings are small, they do add up after a number of tastings. If you are unsure about spitting, practice at home. A frequently heard suggestion is to practice in the shower. Do you think wineries are being stingy when they set out tiny crackers or tiny bites of cheese? Remember this is not your lunch. The purpose of the crackers, dips or cheese is to cleanse the palate and to help one decide how the wine pairs with food. Some wineries have restaurants, so if you want lunch visit the restaurant. Do you want to enjoy a picnic lunch? Many wineries encourage visitors to bring a picnic lunch. Frequently picnic or patio tables are available. Ask in advance if it is okay to bring a picnic lunch and where to picnic on the grounds. Do not bring wine from another winery or any other kind of alcohol. Laws restrict wineries and many wineries are not permitted to have any other alcoholic beverage on their premises. Besides, if you were going to someone’s home for dinner, it would be tasteless to bring your own entrйe. Staff and visitors always appreciate good manners. If you have the opportunity to visit a vineyard, do not pick the grapes. If you would like to taste a wine grape at harvest time, be sure to ask a staff member. One winery we visited this summer mentioned how they don’t mind visitors walking through the vineyards and taking pictures, but one day a visitor walked out of the vineyard with several bunches of grapes to ask what they were. It did not dawn on him until an owner reminded him that the grapes would have made wine. The visitor tried to give them to the owner who replied, “They aren’t good now. They aren’t ready for making wine.” The best motto to follow in a winery or vineyard would be the National Parks motto, “Take only pictures and leave only footprints.” When you visit a winery, if you like the wine and want to buy it that is great, but you do not need to purchase a bottle of wine. Do not buy a bottle of wine unless you like it. Participating in a winery tasting room can be delightful for everyone.

Italy is second only to France in the production of wines, and it's all thanks to the famous region of Tuscany - or Toscana as the natives call it. You'll find Tuscany in the center of Italy. The famous fashion capital Milan is far to the north, near the borders of France and Switzerland, while Rome is a little to the south. Tuscany is a jewel set between the Tyrrhenian Sea on the west and the Apennines mountain range on the east. It consists of ten provinces, including Pisa (famous for the Leaning Tower of Pisa). The capital city is Florence (and it is here that you will find the historic Uffizi Gallery.) Wine making in Tuscany is just as historic as Italy's architecture and art. Indeed, it extends as far back as the beginning of time. The History of Tuscany Tuscany was first settled by the Etruscans in around 800 BCE, who quickly discovered the wild vines growing in abundance on the "sun-drenched" hills, and these grapes were carefully cultivated to improve their flavor. Several varieties of grapes are grown in the region. Some of these grapes stand on their own when it comes to wine making - for example Cabernet Sauvignon comes only from the Cabernet Sauvignon grape, and the Lambrusco grape produces a variety of dry red wines: Lambrusco Grasparossa di Castelvetro, Lambrusco di Sorbara, Lambrusco Salamino di Santa Croce, and Lambrusco Reggiano). Other wines are a blend of grape varieties. The famous Chianti is a blend three grapes - two red: Sangiovese and Canaiolo, and Malvasia, a white. (Although, there's a story there. Until the 19th century Chianti was made only from the Sangiovese grape. A famous Italian statesman, Bettino Ricasoli, decreed that chianti should be made of the blend of three grapes. But since 1995 that practice has been dying out and most Chianti these days is again made only with the Sangiovese grape.) The history of the evolution of a certain wine is just as fascinating as the history of the vineyards from which they come. If you are a wine lover taking a vacation in Tuscany, you'll want to visit a vineyard or two. Or more! You'll find fourteen "wine roads" throughout the region - each one famous for the wine production from a particular type of grape. Follow each road and stop in at those companies and cellars which are open to the public. Each of the provinces of Tuscany have at least one wine road - Florence and Grosseto have three each. Each road has its own sign system that indicates the wine it deals with, and the towns or places to stop of interest on it. So renowned is Tuscany for its wine-making that several international travel firms offer tours devoted strictly to the wine lover. If you don't feel like exploring the Italian countryside on your own, one of these tours - with like-minded people, will be just the thing for you.

There are also specials available, such as stay and spa packages, that will allow you to enjoy the atmosphere with someone special, or just to relax on your own. It doesn't matter which of the many resorts and health retreats in Mendocino you choose for your experience, you'll be sure to have a great time in a rejuvenating atmosphere.     For many of us in the United States, spring has taken its time reaching us. The cruel fingers of winter have very slowly released their grip. Gentle warm breezes stir the foliage. With grapevines budding, birds singing and plants flowering, it is time to think of spending relaxing, free moments outdoors. Time spent outdoors is soothing for the soul. As Edward Fitzgerald said, "A book of verses underneath the bough, a jug of wine, a loaf of bread-and thou." Picnics, countryside walks or strenuous hikes can be relaxing, enjoyable and romantic with planning. A picnic can be a very spontaneous event as in a “pick up and go” style. Throw a few items in a bag and pick up a blanket on the way out the door. However, if you will be traveling any distance or over rough terrain, it is better to have a plan. Decide where you are going and discover the regulations regarding picnicking and beverages. Skyline Drive, in Shenandoah National Park, permits alcoholic beverages in many areas unless posted otherwise. Check the weather forecasts and make accommodations if necessary. Choose how to pack supplies, food and wine. There are many choices available whether baskets or picnic/wine carriers. One item that many wine enthusiasts would enjoy is the wine backpack or the picnic backpack that will hold a wine bottle and wine glasses. Our preference for these types of items is to make sure they are lightweight especially if you are planning to walk far or hike uphill. There are a number of good backpacks and you will find one that meets your needs. If you decide to order online, do check out reviews on the item. It is always good to get someone else’s opinion. We prefer a backpack that has room for plates, utensils, cutting board, wine glasses, napkins, wine and food. Things to consider when purchasing a good picnic/wine carrier include: size, weight, comfort, and cold storage. Backpacks often include place settings for two or four. Check to see if there is room for additional settings. Consider the weight of the picnic/wine carrier if you are hiking for an extended period. Carrying extra weight can tire you out quickly. Check to see if the straps on the picnic/wine carrier fit comfortably. Can you adjust the straps in case you need to wear a jacket? Will the picnic/wine carrier allow you to keep cold foods cold and hot foods hot? In addition to picnic supplies, there are other items to carry. Think of packing sunscreen and mosquito repellent. Bottled water may be needed while hiking long distances, along rugged terrain, up elevations and down slopes. Take a camera so you can take memories back with you. Last spring and summer, we enjoyed lunch on a rock. In late April the trek to Marys Rock in Shenandoah National Park was difficult but worth it because it had an outstanding view. Only one other hiker was perched between rocks reading a book. We had our lunch on a rock and enjoyed the views. Our lunch was simple with two types of cheese, crackers and a Pinot Grigio. It was the perfect setting to watch birds flying below you, take photographs and feel a constant breeze. The scenery was breathtaking and the solitude was uplifting. In August, we hiked up Maryland Heights at Harper’s Ferry National Park. It was a hot day and water breaks along the way helped us make it to the rocks for a spectacular view of the Potomac River and the town of Harper’s Ferry. We enjoyed crackers and cheese with a picnic red wine. There was plenty of room to find a rock and spread out. This area was busier than Marys Rock however there was plenty of room with unobstructed views. Everyone has different ideas of where to walk, hike and picnic. Choose your favorite spot and enjoy. Tip: Our experience has been that picnic/wine backpacks and baskets sell out quickly. If you plan to purchase a basket or carrier for this summer, buy one soon.

         
    Winchester mystery house

     

    The Winchester Mystery House was once the personal residence of Sarah Winchester, the widow of gun magnate William Winchester. She commissioned the house to be built in 1884, and construction continued under her guidance for the next 38 years, 24 hours a day, seven days a week, and 365 days a year until her death in 1922. The mansion is now opened as a tourist attraction in San Jose, California, and draws thousands each year to explore the most unusual architecture. What draws people to this mansion is the bizarre phenomenon in its construction. Legend has it that Sarah visited a psychic after the deaths of her husband and daughter; the psychic convinced her that her family was cursed due to the deaths from the Winchester Rifle; the only way to appease the spirits of those killed by the gun was to continuously build a home for their spirits to find rest. It is believed that she was told if she stopped building, she would die. She was obsessed, whether the legend of the medium is true or not, and she believed she was haunted. A blue print was never drawn for the mansion; many of the 160 rooms were drawn by Sarah herself, making you wonder what thoughts were crossing through her mind. The house gains its fame from the staircases leading nowhere and a chimney rising four floors. There are doors that open onto blank walls and the upside down posts may astonish you as well but then again, what would you feel looking at a window that is built into the floor? Sarah Winchester considered the number thirteen and spider motifs to be lucky, and these beliefs reappear around the house. She had a very expensive imported chandelier altered to accommodate 13 candles instead of 12, there are clothes hooks on the walls all equalling 13, and there are 13 coloured stones on a spider web patterned Tiffany window in the home. There are 13 bathrooms, 13 fireplaces and even 13 California Fan Palms lining the front drive. Of the 160 rooms, 110 are open to the mansion tour, allowing you to experience the mysteries of the Winchester Mystery House for yourself. After enjoying the architectural marvels that can be found in the mansion, you can retire to your room at the Crowne Plaza Hotel. The hotel is located in downtown San Jose, across from the San Jose McEnery Convention Centre, the Centre for the Performing Arts, the Tech Museum of Innovation, Adobe headquarters and within walking distance to the HP Pavilion. The hotel offers cosy guest rooms that are well furnished and equipped with modern amenities. The Mediterranean style restaurant, at the hotel, serves a variety of delicious delicacies for your pleasure. All in all, the Crowne Plaza Hotel is the perfect location to relax and enjoy all that San Jose has to offer.

The only drawback is that because of the fact that Wilson Island uses solar power, all the hot showers are in the central amenities building, where each tent has its own private designated area. So what will you do on Wilson Island as your perfect honeymoon resort. The short answer is little or nothing, but you could cheerfully snorkel right off the beach where you will see some fantastic fish, and perhaps even a turtle as well. You could just lie in a hammock and be lazy, or you can walk round the island, picnic on the beach, and end up watching the sunset drinking champagne, or the sunrise with a hot cup of coffee and biscuits. Wilson is that kind of place, probably idyllic for three or four days with no mobile phone coverage, no children, no television, just the birds, and the crashing of the sea to listen to.
