    What the heck is bubble and squeak

     

    I am a frequent visitor to Thailand and love to go to Pattaya. I usually like to eat a big breakfast, skip lunch and then go out for some Thai food for dinner. I discovered a very nice British pub called the Sportsman on Soi 13 in Pattaya and immediately liked the atmosphere. With big screen TVs, a pool table and a great dйcor, I found this air-conditioned pub a great place to go for breakfast. The problem I had was with the menu. Being from the United States, I had no idea what a full English breakfast was. But, I was hungry, and it was at the top of the menu and was the most expensive item, so I figured it was the biggest. It was still a bargain at about 240 Baht – at least I thought it was. Six dollars for breakfast at the exchange rate of the time seemed to be a decent price. Considering that it was a very nice place, with A/C and the BBC on TV. So, I order the full English breakfast not really reading what comes with the meal. I am, however, pleasantly surprised with the platter of food I am presented. I get bacon and eggs, toast, juice and coffee, sausage, beans and hash browns. At least I though they were hash browns. There were also fried tomatoes, but I am not a big tomato fan, so I declined. I grabbed the menu to see what was listed because the hash browns were not exactly what I was used to. The menu said everything as listed above, but no hash browns were part of the full English breakfast. There was something called bubble and squeak. I had absolutely no idea what that was. But I was bound and determined to find out what it was that I had eaten and had actually tasted pretty good. I did some research on the Internet and found out that bubble and squeak was very similar to hash browns. I had the potato part right but I had no idea what else was in there. Research showed me that the rest was vegetables – mainly cabbage, carrots and peas. I am not a big fan of veggies, but all of this mixed together tasted yummy. The platter was huge and the food was very tasty. So, even if you aren’t a Brit, stop by one of the many British pubs in Pattaya and check out the full English breakfast. It will definitely fill you up and have your bubbling and squeaking.

    Freshly brewed coffee is all the rage today and you have been bit by the bug. You enjoy your quick stop into the local coffee shop to order your special drink as you head to work in the morning.     What you need to know about potato salads

     

    Potato salad is a dish, usually an appetizer, made, obviously, from potatoes. However so, it still varies throughout different countries and regions of the world. Potato salads are more classified as side dishes than salads for they generally just precede or the follow the main course. Many would claim on having made the best potato salad and would offer the truest and most authentic way of making it. But no matter what is said by many, the best potato salad, or any kind of salad at that matter, is purely of personal preference. Some like their potato salads mingled and just oozing with its dressing, some would prefer theirs to be really soft and tender, and others would want their potato salad to be crispy. Potato salads are oftenly served along with hot dogs, barbecue, hamburgers, roasts and cold sandwiches. This kind of salad is categorized more as a casual fare and more oftenly served during outdoor barbecues, picnics, and other sorts of casual events or meals. But this fact is not stated to underestimate their savory goodness. Potato salads are definitely a popular menu choice of various chefs and cooks for preparing food for a large crowd, and since they can be made in large quantities with utter ease, they can also be made in advance and kept in the refrigerator until it is their time to be served. You must never worry about emptying your wallet when going to the grocery store to buy whatever ingredients you need for you potato salad. The ingredients needed for potato salads are inexpensive and very much affordable. Thus, you do not have to worry about making one yourself because it is, in fact, quite easy. You would need two pounds, or approximately six large potatoes which are peeled and quartered; two stalks of chopped celery; one finely chopped onion, of which you could cook using a microwave on high level for just one minute to be able to reduce that hotness, if you want, that is; four green onions that you have sliced for just ј of an inch thick; one large carrot, shredded; ј cup of a sweet pickle relish; ј cup of chopped red onion; one teaspoon of dry parsley; a half teaspoon of mustard seeds; you would also need pepper or salt for the taste, along with balsamic or wine vinegar, and also with yogurt or a nonfat mayonnaise. Of course you have to cook the potatoes in boiling water for approximately fifteen minutes, or when the potatoes are already barely tender. You have to check every minute or so after the first ten minutes have gone by. Once you have confirmed of the cooked status of your potatoes, cut them into smaller pieces. After that, just leave them be so that they will cool down. Then, you should mix the other ingredients you have also prepared in a large bowl. Once you are confident that you mixed them finely, add your already cooled potatoes, and then mix them, altogether, well. When all these are done, chill your self-made potato salad, but just do not forget to stir it a couple of times during the chilling time you have alotted for it.

    It’s not everyday that you will come across a revolution in the making, but there you have it. From being nearly organically-ignorant twenty years ago, to being semi-organically-ignorant fifteen to ten years ago, the human race is now making direct contact with its grassroots and going back to being healthy and eating healthy. And not surprisingly this has also spread to such an extent that we now have organic baby food as well. We have been privy to witness a revolution, a significant change in our history that ultimately comes down to whether we care about what we put in our bodies or not. Luckily with the tides turning more and more towards organic grassroots, there has also been a resurgence (a very small one for the moment) of making your own organic baby food.     When did soda become our water

     

    Last night I met with my Wednesday night running group. During the run our conversation turned to the subject of drinking pop. A general consensus was many people drink soda as their only source of fluid. I found that really ironic, with all the commercials about bottled water. Everywhere I go I see bottled water. I thought that everyone drank water. But then again I am not everyone. I was told that people think that it is ok to just drink pop because; there is water in soda pop. Well yes there is water, I must agree. What about carbonated water and sugar that are also added to soda. I just don’t believe that soda is as good for you as drinking water. What did they do before the invention of soda pop? Those poor cavemen only had water to drink. Is it the sugar in pop that causes an addiction? I think that there is a comforting good feeling when people drink soda. Like having a treat with every time that a drink is taken. I wonder if it’s the super sizing of all the fast food restaurants that have helped people become so addicted to pop. Or all the free refills that eating establishment’s offer. Then I was told that people do not like the taste of water. This I can understand because I add lemon to the water that I drink a lot of the time. Does this make me just like a soda pop consumer? I guess the whole point of all this ranting is that I was totally shocked to watch someone drink about a gallon of pop when eating supper. This same person describing in great detail to me how they wanted to be a great runner. The only thing that needed to be changed was to eat better. I found that so amazing. I guess that does not make anyone’s dream any less important because they drink a lot of soda pop. I tried to explain why water is so important to this person. After a few sentences I realized that life only teaches words do not. I wonder if this needs to happen for all those in this world who want to do things their way.

         
    Where do they get bottled water

     

    Bottled water court decisions give us quick glimpses into the sources of bottled water. For example: * The Nestlй company, which bottles water under several well-known labels, fought ferociously in court to retain its rights to appropriate water from the Great Lakes – to put in bottles – to sell to you and me. When Michigan’s government instituted a new law that allows Nestlй Corporation to continue taking up to 250,000 gallons per day, and sell them at a markup well over 240 times its production cost, Nestlй dropped the court battle. * In Vermont, “Poland Spring” (also a Nestlй product) was brought to court with a complaint that the bottled water in “Poland Spring” came not from "some of the most pristine and protected sources deep in the woods of Maine," as advertised, but from other sources. In fact, on occasion, the water was trucked in from an unknown source out of state! But the court reasoned that Congress and the FDA made a conscious choice to allow states to regulate bottled water as long as their standards matched FDA standards. The bottled water met both standards, even though the source and advertised source were not the same. What is bottled water? The United States Food and Drug Administration says bottled water is any water meant for humans to drink that is sealed in bottles with nothing added except…. Aye, There’s The Rub! As William Shakespeare said in Hamlet, speaking of sleep and death, “Aye, there’s the rub.” Bottled water may have nothing added except, and suddenly, with that small phrase, bottled water becomes something other than the pure water we thought we were buying. … except what? Well, bottled water may contain “safe and suitable antimicrobial agents” if the bottler wishes. Fluoride may be added, but it has to be within established limitations, of course. So that’s what bottled water is. Where Do They Get Bottled Water From? Excuse the preposition at the end, but this question is frequently being asked just that way. Where do they get bottled water from? As seen in the court cases cited above, they get bottled water from various sources: lakes, streams, wells, springs, glacier run-off, and even from municipal water supplies. Bottled Water May Be Tap Water You will probably be surprised to learn that they get at least 25% of our bottled water right from the tap. Bottlers simply bottle the local tap water, label it, and ship it off to stores. Sometimes they treat it first – sometimes they don’t. We consumers pay up to 10,000 times more per gallon for bottled water than we would pay for tap water. What disreputable bottler would get bottled water from a tap? 1. Examine the label and cap on your bottled water. Look for the phrase "from a municipal source" or "from a community water system" on either. Those phrases mean tap water. The absence of the phrases is no guarantee that the bottle does not contain tap water, but their presence means it does. 2. In some states, you can find out the source from the state bottled water program. Not every state has this, but some like New York and Massachusetts list bottled water sources. Call the state where your bottled water originates and ask. 3. Call or write the bottling company itself to learn where they get your bottled water. Ask about health and safety measures used in bottling, filtration or other treatment, and additives. If you choose to buy bottled water and are concerned about where they get it, do your homework. Research the various brands, and find those that truly use known, protected sources. Today, Brazil is the world's largest producer of coffee – producing about 25% of the world's supply. About 80% of the coffee beans grown in Brazil are Arabica. Brazil is also known in the specialty coffee industry. Brazilian farms grow primarily Bourbon, Typica, Caturra and Mundo Novo coffee cultivars. The Brazilian harvests take place between March and October. The farmers harvest the coffee cherries by strip picking and other mechanical methods. Depending on the weather conditions, either the dry or wet method of bean processing is used. Columbia: Coffee was introduced in Columbia in the early 1800's. Today Columbia is second only to Brazil as the world's largest coffee producer. Columbia produces about 12% of the world's supply of coffee. The Columbian coffees are rich in flavor with a heavy body and bright acidity. They are known to be intensely aromatic. The Columbian harvests take place between October and February, and then again between April and June. Columbian farms grow Bourbon, Typica, Caturra and Maragogype coffee cultivars. Mexico: Coffee was first planted in Mexico in the late 1700's. The coffee bean grown in Mexico is generally considered to be an uncomplicated bean, and is used more as a base for blending. The Mexican farms grow Bourbon, Mundo Novo, Caturra and Maragogype cultivars. These are usually grown organically on small farms. Guatemala: The climate in Guatemala is very diverse due to the soil, rainfall, humidity, altitude and temperature. For this reason, Guatemala has seven distinct coffees that are produced. The time of harvest varies throughout the regions, but is primarily October through January. Indonesia and New Guinea: Sumatran coffees are some the heaviest, yet smoothest and most complex coffees in the world. Their most notable coffees are the Mandheling and Lintong types. These are grown inland. Honduras: The coffees produced in Honduras are generally considered unremarkable in quality, but are a good base for use in blending. The Honduran harvesting takes place between October and March and generally the wet process method is used. The Honduran farms grow Bourbon, Caturra and Typica coffee cultivars. Very little of the Honduran coffees or coffee blends reach the United States. Ethiopia: The coffees grown in Ethiopia are widely considered the most unique and fascinating coffees in the world. The three common types of coffees grown in Ethiopia are Harrar, Ghimbi and Sidamo. These are known for their full bodies and rich aromas, and each has its own fruit-like tastes. Some other countries that also produce coffee are Costa Rica, Dominican Republic, Ecuador, Haiti, Jamaica, Kenya, Malawi, Nicaragua, Tanzania, Uganda and Venezuela.

The number of coffee producing coffees is growing rapidly, and the differences between the types of coffee according to their origin, can be astounding. Coffee produced in Columbia is, of course, known worldwide. Although it is often used in mass produced supermarket coffees, there are a number of very fine Columbian grinds that should not be overlooked. One example is La Esperanza, grown at over six thousand feet in Tolima. Whilst the aroma of this particular coffee is likened to cherries, the taste contains an exquisite combination of chocolate and pipe tobacco tones. Less well known are coffees from areas such as Hawaii. A particular favorite from this island is Kona, which comes in a variety of roasts from light to espresso. This particular coffee has a very low acidity which works beautifully with the powerful flavor of the dark espresso roast. Continuing east on our coffee tour, we come to Africa, home to a number of superb coffee flavors. In Tanzania, should you be brave enough to attempt an ascent of Kilimanjaro, you would find the unusually shaped Peaberry coffee bean. The single oval bean results in a lighter coffee with a higher than average acidity. Ethiopia is another crucial part of Africa’s coffee history. A really unusual taste from the Yirgacheffe region mixes ginger and citrus peel to give an effect that is both sharp and chocolate like. Our first taste of Asian coffee should probably be sampled in India. The coffee beans that result from the humid and rainy months of the Monsoon Malabar are swollen and golden in color, producing a distinctive flavor and aroma of apricots. Jumboor beans are another popular variety, which gives a raisin like flavor to the drink. A lighter alternative can be found in Indonesia, where a sweet and flowery drink is made from beans in the Lake Toba region of Sumatra. Another unusual location for coffee production is Jamaica, where the Peaberry, closely related to the African single bean of the same name, is made into a rich, intense drink with a sweet acidity and a range of floral tones. There are a lot of little different things like that that can make a big difference in your drinking experience. Now of course there’s a big marketing presence in all these different varieties of beer glasses, but a true beer drinker knows that as the beer is poured in, something else is going on besides the nice looking logo on the side of the glass. The hue of the beer changes, the head forms at the top, and the anticipation of that first cool drink is more profound and complete. Just like any other pleasurable aspect of life, there’s a psychology involved here. Flavor, texture, aroma; these are the things that make up the drinking experience. One of the most important aspects of beer glasses is how the shape affects the formation of the head. This is important because the head acts as a sort of trap for the volatiles in the beer. What’s volatile in a beer? Compounds such as hop oils, a variety of yeast byproducts such as spices or alcohol are what make up a beer’s aroma and taste. Earlier beer that man drank was darker, stouter, and a lot grainier too, mainly because of the lack of filtration. As glass became more and more popular, so did lighter colored beers and better filtration processes. With so many different kinds of beers, a variety of beer glasses are needed to produce the maximum desired effect of the beer drinking experience. Many people have said that the 16-ounce pint glass is overall the most versatile glass for the widest range of beers. Many people place the importance of a glass because of the shape as they drink. A tall pilsner glass can be tipped up for quick drinking, while the tall narrow glass keeps the entire drink cold the whole time. So which is the correct glass to use with which beer? The answers are vast and varied. Europeans may do it completely different than anyone else in the world, but what it really comes down to is your own personal preference.     White grapes are as different as apples and oranges

     

    With all the bottles of wine on the market, it’s no wonder people often have no idea what they like and what they don’t like. On many an occasion in the past I have found myself loving a bottle of wine only to have no idea what sort of white wine it was. With so many grapes being used in wine it is easy to confuse. Hopefully this will help put some confusion at bay when it comes to knowing the difference between various white grape varieties. Semillon Definitely a medium to full bodied grape, Semillon is a native to the Bordeaux region in France even though today the region that holds the title for having the most success with this grape is none other than the Hunter Valley region of New South Wales in Australia. While it can be often be said (and rightly so) that wines that are dominated by Semillon lack youthful aroma, they always tend to have a fairly full body and be low in acidity. It is for this reason that Semillon makes a wonderful “second” grape in blending of wines producing some wonderful flavours. Semillon even works well when blended with the well-known loner, Chardonnay, giving richness and weight without sacrificing the aromatic delicacy. That is not to say that a Semillon alone won’t make for good wine. Semillons on general are a variety that is best drunk after a few years. Chenin Blanc Origins in the Loire Valley of France, Chenin Blanc grapes have a natural high acidity as well as an uncanny ability to get along with the botrytis mold that likes to suck the water out of grapes. It is because of both of these features that Chenin Blanc grapes are so versatile and used in all sorts of wines ranging from fizzy, sweet and dry. Flavors are similar to that of a Sauvignon Blanc; herbs, green apples and gooseberry. A little known fact to some people who believe that white wines must be consumed within the first couple years of vintage would be surprised to know that Chenin Blanc tastes best around ten to fifteen years. Sauvignon Blanc Sauvignon Blanc tends to be one of those grapes that you either love or hate. A crisp and mineral tasting wine that has it’s origins in France; the aromas of this grape have conjured a variety of adjectives. Such descriptions range from passion fruit, mint and basil to asparagus and even freshly cut grass. Being that these wines are crisp and very refreshing and somewhat uncomplicated its ability to be paired with foods is incredible. Foods ranging from shellfish to goat’s cheese are all great matches with Sauvignon Blanc. Chardonnay Chardonnay comes in all different sizes and shapes and is grown all over the world. While some complain that this variety of grape is rather boring, there is a reason it is the most widely consumed grape variety in the world. Because this grape very readily will sink its roots in almost any soil, the flavours and aromas vary greatly. In the southern hemisphere, the aromas range from peaches and pears to mango, pineapple or even banana. Northern hemisphere grapes however, are much different ranging from delicate citrus to full flavoured citrus, sweet spices and nuts. Muscat Muscat is a sweet grape that comes in many forms from all over from Italy to Spain to Australia. Because of this broad variety it is hard to pin down on specific flavour or aroma for Muscat. Sometimes apple, pear or flowers can be detected in some of the lighter wines while in the more robust Muscat wines you might find chocolate or coffee. Gewurztraminer I don’t think there is any better way to sum up the Gewurztraminer (ger-vertz-tramina) grape than by quoting Matt Skinner, author of “Thirsty Work” where the inspiration for this article comes from. Matt states, “Like and oversized drag queen with too much make-up, way too much perfume, mega high heels, and very little shame, this variety is the flamboyantly camp member of the white grape family! But, sadly, it also doubles as one of the uncoolest grape varieties in the world. In fact, it’s fair to say that if Gewurztraminer were an outfit it’d be socks, sandals, and a camel brown safari suit. Try pronouncing it – apart from being much harder to say than Chardonnay, it even sounds a bit naff. And that’s the problem.” This can be a very correct way to describe this Alsace favourite because the aromas of this grape are some of the most bold and bizarre but that doesn’t mean that this is a bad grape by any means. In fact it really isn’t all that bad! These grapes tend to have flavours and aromas reminiscent of ginger, rose, lychee and cinnamon to name a few and because of low acidity are rich and carry much weight in your mouth giving a long lasting flavour. Perhaps this is why this grape makes a great match with mild spicy, sweet and tangy foods such as Chinese or Thai. Riesling Another under appreciated grape historically from Germany. Oftentimes people complain that this grape is too sweet and try to avoid it all costs. It wasn’t until recent years that this grape is making a comeback as a match to seafood and dishes with Asian infused flavours. The best Rieslings have aromas of citrus, flowers and spice while the flavours can be more of lemons and minerals. Super dry Rieslings are very popular nowadays while the best examples of more expensive Rieslings are actually the very sweet late harvested dessert and ice wines. It is also worth noting that Rieslings are another white grape that ages very well so don’t worry about drinking a 20 year old bottle! Pinot Grigio/Pinot Gris Technically, Pinto Grigio and Pinot Gris are the same. Pinot Grigio planting has been concentrated in northeast Italy while Pinot Gris makes its home in Alsace in France. Pinot Gris, is a French expression for light delicate and fresh and has flavours that are slightly fat and rich often from the time is spends in wooded barrels. On the other hand, Pinot Grigrio (meaning the same as Pinot Gris) is usually stored in steel tanks and drunk while it’s young and light and vibrant. Again, Matt Skinner best explains these two grapes as being like “identical twins separated at birth and raised in different countries.” While these are just some of the many varieties of white grapes out there, they are without question the most popular of the bunch. Each grape is unique in its flavour and aromas and should thus be treated as just that, an individual. Not all white wines are created equal and not all white wines are meant to be drunk old but all whites are meant to be enjoyed.
