    The peanut allergy problem

     

    More than 3 million people in America have a peanut allergy which translates into 1 out of every 90 people or 1.10% of the population. The peanut allergy problem continues to grow. Peanuts are a dietary protein that’s very cheap and generally in its purest form is peanut butter. Yet it has become one of the most common foods for allergies. Unfortunately peanuts are finding there way into many different foods and trace amounts are also entering the food chain from varying angles which is making the peanut allergy problem worse. Because of the seriousness of these allergies foods are not warning that trace amount of peanuts may be in the product while other products are going for the market based on the peanut allergy problem and proudly announcing there are no peanuts in their products so relax and enjoy. Anaphylactic shock is one allergic reaction. It can move rapidly becoming fatal in just a couple of minutes. It requires epinephrine as the earliest signs. Symptoms include apprehension, flushing, hives, swollen mouth, eyes, or tongue, itching, tightness in the throat and chest, runny nose, vomiting, diarrhea, nausea, stomach pain, sudden fatigue, chills, dizziness, rapid heartbeat, and on the most serious end loss of consciousness and death. The personal allergy problem should not be ignored. So with the peanut allergy problem being such a problem how come so many still get caught. Sometimes it is a result of incomplete labeling of the packaging, it can also be ignorance of food allergies at schools or restaurants. Some medications can actually cause a peanut reaction, and traces of peanuts aren’t always marked on packages. Although things are improving the peanut allergy problem is enhanced because often food labels aren’t carefully read. As consumers we are also not trained to question the contents our food where it is prepared and does not have label packaging such as in restaurant take out. Sharing utensils can even be dangerous to someone with a peanut allergy. And taste testing just a tiny bit can be deadly. The peanut allergy problem also has an identity issue. Many are not aware that just trace elements can kill. We also have a tendency to minimize or deny the allergy even if we have recognized previous symptoms. Failure to tell someone when an allergic reaction is occurring is also a big problem and the biggest problem is not wearing a medical bracelet that warns of a peanut allergy. The peanut allergy problem has sees a great deal of failure in the treatment end. Many peanut allergy sufferers do not carry epinephrine sold as Epi-Pen®, Ana-Kit ®. They should have it on them at all times and they do not. And of those that carry it on them many do not use it faster enough. They also do not carry two epinephrine doses on them and they should because the second one is often required. Lastly failure for the individual to be taken to hospital can cause death. Lifestyle changes, better awareness, better packaging, better training in dealing with a reaction, and faster medical intervention are all ways that will help reduce the peanut allergy problem.

    If you have ever made your own wine, you may be the type who is curious to know what it would be like to make your own coffee, from scratch, that is. You have a coffee grinder, and now you have to roast your coffee. Roasting and grinding your own coffee will give you a perfect cup, and it is not as hard as it sounds. There are many kinds of roasters, but something simple as a frying pan or popcorn popper would work. The most important quality is that whatever you use is very clean. You do not want to spoil the taste of your coffee with oils or foods that were cooked before. Start with very good beans, and then decide which type of coffee you want. A dark roast coffee will have less caffeine than light roast coffee, but the lighter roasts usually have a bitter taste. You need to roast your beans to a temperature between 460F (223C) and 530F (262C). At these temperatures, you will create some smoke, so put your ventilator on, or have a small fan running. You will also want to open all of your windows to get rid of some of the smells. In addition, since the smoke and heat may set off your fire and smoke alarms, you may want to disconnect them. Just remember to put them back on when you are done. If you are using a coffee roaster, there may be a temperature gage built in, but if you are using something else, you will need a candy making thermometer to make sure you reach the right temperature. As you are roasting you will see the green coffee beans turn yellow, then brown. If you like a dark roast, you will leave the beans a bit longer. The moisture in the bean will be released as the heat increases, and you will start to hear cracks after about 5-7 minutes. Keep stirring so that the heat is evenly spread and you roast all of the beans in turn. Now the sugars inside the coffee bean will start to caramelize as they brown and even burn slightly. Check the color to make sure you get the darkness of roast you want. If some of the beans are starting to crack for a second time, you probably should stop roasting; this degree of dark roast is too strong for most people. Now you will pour the beans into a metal container till they are cool and then start to shake them. Roasting the bean has removed some of the chaff, and you will now want to separate that away by putting it through a mesh screen. You can try small batches at a time until you find the exact degree of roasting that suits your taste. If you are using the popcorn popper to roast your beans, be sure it is one that is not enclosed. You want to be able to see the beans and agitate them so they are roasting evenly. If you use a pan, a cast iron one works very well. Now you are ready to make your gourmet espresso, with your own ground and roasted coffee beans.

    If you're not familiar with Vacuum coffee makers then a written description of how they work may have you a little lost. How ever, to those that own or use vacuum coffee brewers you know what a great cup they make, and what a joy they are to watch. If you're a fan of using a French Press to brew your coffee each day, then you'll love the coffee made in a Vacuum maker. It works on a similar principle of boiling water flowing over freshly ground coffee beans then filtering the grounds out of the water leaving behind a wonderful tasting and smelling cup of coffee. There's something to be said when a paper filter isn't used with coffee grounds, it allows all the acids and aromas from the beans to transfer into the water and create a very special tasting cup of coffee. One that can't really be compared to what your regular drip coffee maker makes. So how does a Vacuum coffee maker work? Well unlike some of my friends who thought a vacuum coffee maker was a combo vacuum coffee brewing machine it's actually quite a small glass or sometimes plastic appliance. There are both electric and stove top models available (For a great electric or non electric vacuum coffee maker check out the Bodum Santos). There are two compartments an upper and lower. The lower one has fresh water added to it, and the upper fresh coffee grounds. The two are connected with a plastic or glass tube which has a filter in the center. Once heat is applied to the lower area either via stove top or an electric element the water begins to boil. Once boiling that water travels up to the upper chamber where the coffee grounds are stored. The two then mix together and the brewing process begins. It's really quite amazing to watch the water move up and spill over the coffee, it's a lot more interesting then watching the drips come from your regular old peculator. Now this is the real amazing part, after a short period of time the mixed coffee then beings to transfer back to the bottom chamber once all the water has boiled away. The coffee grounds are separated from the coffee via the filter that is in the tube connecting the two chambers. Depending on the size of the holes in your filter and the coarseness of your coffee grounds you may get a bit of sediment in your coffee. Once all of the coffee has transferred to the lower chamber again you're done and ready to enjoy. Sounds like quite the process to brew a pot doesn't it? In real time all of this happens quite quickly, and it isn't any longer to make then what a French press would be. If you're a real coffee enthusiast I highly recommend you either try out the coffee made in a vacuum maker, or consider purchasing one for your own kitchen. While it may not take the place on weekday mornings of your regular drip coffee maker, I'm sure it'll be the treat for weekends, and you won't be disappointed.

    While some people only drink coffee in order to wake up in the morning, others are very selective about the coffee that they drink. If you fall in the latter category, you should try gourmet coffee. This coffee comes from beans that have been grown around the world and then made into flavored coffee drinks, using special preparation techniques. These types of flavored coffee are actually causing people to stand up and take notice of this beverage especially as people's tastes evolve. While they start out drinking coffee that has a lot of cream and sugar in them, over time they will put less and less cream and sugar and may even start to drink it black. Find the proper potato for the dish that you are preparing. Waxy or boiling potatoes are better suited for soups, salads or barbequing. Some names to look for in your store are Red Potato, Round Red or Yellow Potato to name a few. For baking, mashing or frying, try to use a starchy potato variety. These potato varieties are usually long and coarse and their skins feel like a cork when touched. Some familiar starchy potato names you’ll see in your grocery store are Gold Rush, Russet Arcadia, and Russet Burbank. Be sure to store potatoes in a dark, dry, cool area. Temperatures above 50 F cause potatoes to sprout and shrivel. Refrigeration is not recommended because the starch will turn to sugar and the potato will turn dark when cooked. Like oranges, potatoes are very high in vitamin C. One medium potato contains 45% of the vitamin C that's recommended for good health. Potatoes are also high in fiber and carbohydrates and contain more potassium than a banana. A potato is naturally low in calories and contains no fat, sodium, or cholesterol. The skin of the potato provides a helpful dose of fiber, iron, potassium, calcium, zinc, phosphorus, and several B vitamins. Enjoy the following delicious easy potato recipe: Parsley Potatoes 1 large onion, chopped 1 large clove garlic, minced 2 tbsp butter, melted 5 med red potatoes, peeled and cubed 1 c water Ѕ tsp salt ј tsp pepper 1/3 c chopped parsley Sautй onion and garlic in butter in a large skillet until tender. Add potatoes, water and seasonings. Cover and simmer 15 minutes or until tender. Drain liquid, and discard; top potatoes with parsley. Serves 6.

A recent report by War on Want and the British GMB, investigating the case of Wal-Mart (ASDA), shows how the relentless pursuit of supermarkets of the lowest possible prices has a negative impact on the supermarkets local communities as well as their suppliers, often based in the poorest countries of the world. A few years ago, the supermarket retailer Safeway (now owned by Asda AKA Wal-mart) sent letters to their farmer suppliers asking for a contribution of Ј20,000 per product line, in order to improve marketing of the products. They went on to invoice their suppliers for these sums. Supermarkets have tended to only do business with the largest scale suppliers at the lowest cost wherever they may be located. Next time you go to the supermarket take a closer look at the food labels, you will see New Zealand lamb and vegetables from Israel. But this is not what most shoppers would choose - when asked, they say they prefer British farm food. Supermarkets are moving towards this as many are now offering vegetable and meat box schemes stocked only with local and often organic food. Many small firms have spent years building organic box schemes and organic delivery into a viable business only for supermarkets to jump in on the act as it becomes more mainstream. Britains supermarkets are damaging British business, are bad for consumers and bad for the environment. Farmers and consumers are paying the price of its uncontrolled expansion here and overseas. MPs must act now to curb the growing market power of supermarkets and ensure that Britains booming supermarket industry does not kill off farmers, consumer choice and the traditional British high street. The UK Competition Commission has been called upon to look at the actions of supermarkets which many say are damaging almost everything that they touch. Tesco controls nearly one third of the UK grocery market, setting the standard across the retail sector. But while the company boasts about its commitment to fair trade and corporate responsibility, a new report from Friends of the Earth shows that Tescos practices are putting many UK farmers out of business; while on the high street, some 2,000 independent stores went out of businesses in the last year alone, unable to compete with promotions and planning and taxation policies which favour the multiples over smaller shops. One in five people think that supermarkets are most influential when planning decisions get made, over the council or local people. Often people cannot get obtain planning permission to build an extension yet the supermarkets are often granted permission to build huge stores the size of football stadiums But, things are changing for the better– Supermarkets are trialing having tractors deliver goods straight to the supermarket door to save on food miles. Tesco are installing solar panels and using renewable energy in certain stores to show how green they are becoming. Waitrose has started its own fair-trade scheme. The cash has been raised as part of the food retailers initiative to return a sizeable proportion of profits it earns on sales of citrus fruits to the farmers who grow them. Ikea is to become the UKs first major retailer to regularly charge customers for plastic bags, to try and tackle waste and environmental damage. The success of Marks & Spencers ethical marketing drive that urged shoppers to "look behind the label" has dwarfed all its previous advertising campaigns, according to research from a leading City brokerage. Supermarket Sainsburys is to sell more than 500 of its own-brand products in compostable packs instead of plastic as it seeks to cut packaging waste. It says the scheme, already trialled on some of its organic range, will save 3,550 tonnes of plastic a year. Is this a genuine change in attitudes by the supermarkets or merely a change in public relations direction to ensure they get all the green pounds that tend to be spent in local markets and shops?     The promising reduction in gastric cancer rates

     

    The news is full of frightening statistics about cancer and other diseases. From what we read and hear on television, we are led to believe that more and more people are being diagnosed with cancer and that more and more people are dying from it. In some cases, this is true. Incidences of and deaths from cancer have risen every year for the last fifty. However, don’t let this lead you to believe that no progress is being made. Let’s take a look at gastric cancer, for example. Gastric cancers were once the leading cause of cancer death in the United States, and in many other countries, too. However, since 1930, the incidence of and number of deaths related to gastric cancer have steadily decreased. By 1994, gastric cancer was the eighth leading cause of cancer death in the US and the statistics appear to continue to be on the decline. So, why are we seeing less gastric cancer today than before? Well, the medical community doesn’t appear to have made any definite conclusions, but there are some factors that are believed to be contributing to this promising trend. The number one reason doctors believe that gastric cancer is on the decline is the higher consumption of fresh fruits and vegetables in our diet and the lower consumption of foods that are preserved by salt. Years ago, refrigeration in the home was not common, so keeping fruits and vegetables at the ready was not easy. And, it was common to preserve meats and some other foods with salt rather than freezing them. When the ability to refrigerate and freeze foods in the home became commonplace, the American diet changed. We began to eat more fruits and vegetables and freeze our meat instead of curing it. So, how does this help reduce our risk of cancer? Well, it’s actually quite simple. A diet rich in fruits and vegetables means a diet rich in anti-oxidants. Each day, as we convert the foods we eat into energy, we create free radicals in our body. These free radicals can damage our cells and our DNA. Unchecked free radicals are believed to contribute to the development of cancer and other diseases. Anti-oxidants are excellent at combating free radicals. A diet rich in anti-oxidants is linked with preventing cancer, heart disease, cholesterol problems and a lower incidence of stroke. So, if you’re interested in reducing your risk of cancer, be sure your diet is rich in anti-oxidants on a daily basis. Some of foods highest in anti-oxidants are: Small Red Bean (dried) Wild blueberry Red kidney bean (dried) Pinto bean Blueberry (cultivated) Cranberry Blackberry Prune Raspberry Strawberry Apple Pomegranate Pecan Sweet cherry Black plum Russet potato (cooked) Black bean (dried) Plum So, if you want to improve your health, and reduce your risk of cancer, these fruits should be staples in your diet. And, there’s another way you can get your daily dose of anti-oxidants; one you might not have thought of. Green Tea is High in Anti-Oxidants Green tea has been widely used in Asian cultures for centuries to prevent illness and to treat it, as well. And, many recent studies have linked green tea with the prevention of cancer, and, in some cases have even found green tea to be helpful in the treatment of cancer. Tea comes from the Camellia sinensis plant. There are many different types of tea; most of the differences come from the way the tea is processed. Tea leaves contain very powerful anti-oxidants in their natural state. Fermenting tea leaves, which is part of processing tea leaves for black tea, converts these catechins to other compounds and reduces their health benefits. Therefore, green tea, because it is not fermented, retains more of its original anti-oxidants than black tea. In every part of the world except Asia, black tea varieties are far more widely consumed than green tea. And, black tea is healthy. However, because green tea undergoes less processing, it far outranks black tea in its ability to provide anti-oxidants, and thereby, prevent disease. Asian cultures have a far lower incidence of heart disease, stroke, high cholesterol and cancer. And, while there are likely other cultural and environmental factors that contribute to their lower incidence of disease; their high consumption of green tea is considered a significant factor. In fact, in 1994 the Journal of the National Cancer Institute published the results of an epidemiological study indicating that drinking green tea reduced the risk of esophageal cancer in Chinese men and women by nearly sixty percent. So, if you’d like to reduce your risk of developing cancer and other diseases that often plague us as we get older, eat and drink up. Get your daily fill of fruits and vegetables. And, wash it down with green tea! You’ll be doing your part to ensure you live a long and healthy life!

Then again, if you drink it excessively, it can destroy brain cells - the adverse effect. Beer is also nutritious, although it can destroy your levels of vitamin C as well. Beer is a great source of fiber, as well as other minerals, such as potassium, magnesium, and several B vitamins such as B1, B2, B3, B5, B6, B9, and B12. Beer contains high levels of these vitamins, along with other minerals that are actually good for your body. Although it offers plenty of B vitamins and other minerals your body needs, it will also destroy your vitamin C - which is why you never want to drink too much of it. When it all comes down to it, beer may contain over 95% water, yet it is still a diuretic. Due to the fact that beer contains alcohol, it will always be a diuretic. When you drink beer, you should avoid drinking too much and never, ever, drink beer instead of water. Beer can dehydrate your body fairly quickly, which is one of the biggest cons to drinking beer.     If you go to Spain, you have to try a traditional Sangria. When in Rome, they say, so as the Romans do, and this popular and traditional drink is available at just about every bar and restaurant. Each place may have their own variation of the recipe, so it is fun to try it at different locations and compare. Sometimes the recipe is changed to go with the type of food that is being served. Sangria is considered a summer drink, and you will find it served primarily during the summer when you are in the northern part of Spain, but in the south, where it is endless summer, you will find it served all year long. The mild temperatures of the fall, winter and spring encourage drinking this refreshing, fruity drink. The string of the sangria you will encounter will vary from place to place. Bars will most likely serve a stronger concoction than will a dance club. Sangria itself originated in Spain. The word is the Spanish word for bleeding, and so it gets its name from the color of the red wine that is used in making traditional sangria. There are variations today that use white wine instead, but they are called sangria blanca. The basic sangria recipe is red wine, juice, club soda and fruit. A young red wine is the best one to use, and the ingredients should all be of good quality, so choose a good wine and fresh juices and fruit. The sangria you will be served in a restaurant or bar is traditionally served in a one liter pitcher. The pitcher has a strainer on the lid so the fruit and ice can be filtered out when the drink is poured. Sangria is available by the glass serving, but by the pitcher is the more usual way it is served. However, at a large party, you will find sangria served in a large punch bowl, with the fruit floating on top in a lovely manner. How to make your own sangria: Pour together the following: one bottle of red wine, two cups of orange juice, one half cup of triple sec or brandy, and sliced oranges. Let stand for a while, then stir in ice and two cups of club soda. You can change the fruit or the wine in a sangria recipe, and if you prefer to have a wine drink that goes better with light foods, you may prefer sangria blanca. Another variation is to use sparking white wine. You have to let the flavor of the fruits blend in with the other ingredients, so this drink should be made a few hours ahead of time, or even the night before. When you are ready to serve, add the club soda and ice. Of course, you can adjust the ingredients to suit your own taste, such as using lemons in addition to oranges, or substituting pineapple. If you try different combinations of fruit, juice and perhaps flavored sodas, you will come up with an interesting group of recipes you can serve for different occasions.

In time the superior wine that was produced in the area came to be named ‘Vin de la Commanderie’. Besides Commandaria, Cyprus produces a large assortment of red and white wines, vermouths, ports and sherries. Halloumi, a stretched curd cheese made from cow, sheep or goat milk is the most distinctive traditional culinary specialty of Cyprus. This rind-less cheese is shaped into small loaves of different dimensions and very often flavored with chopped mint, which adds zest to the otherwise bland tasting cheese. Halloumi is a very versatile cheese and can be eaten fresh, grilled, baked or fried and is very popular at barbecues. When grilled or fried, the outer portion turns a light golden brown and the inner portion gets deliciously soft, but not runny. On its own, Halloumi makes an excellent appetizer when drizzled with olive oil. For many Cypriots, Halloumi forms a part of every meal, whether it is breakfast, lunch or dinner. Feta is another popularly used cheese in many Cypriot dishes.

Because this machine is manually operated, the quality of the espresso that is produced may varypared to the pump style however, lever types have fewer parts and require less maintenance. Steam powered espresso machines The steam coming from the heated water creates the pressure for this espresso machine type. Because the pressure could be inconsistent and may not always be strong enough, the quality of espresso that may be produced may not always be good. The steam type espresso machine, however, is easy to use thanks to is smaller design. The Moka Pot The moka pot is the simplest and possibly the most ingenious way of producing espressos. The moka pot is placed on top of your stove and the burner is turned on. As the water boils in the bottom chamber of this espresso machine, a steam is forced through the upper chamber of the pot. Because the moka pot is not a mechanized espresso machine, the pressure produced from the process is weaker than its counterparts. The main feature of this espresso maker is its simplicity.
