The Right Flour Recently we stated that if there is a secret ingredient that bakers use it’s the flour. So we put the right flour on the top of our list. To understand how important flour is, you need to understand just a little about gluten. Gluten strands are formed from the proteins naturally occurring in wheat flour. It's what gives bread its chewy texture. If you use a flour with a higher percentage of protein, you will have more gluten. Most commercial bread bakers are going to use flours with 10 to 14% protein--bread flour. Commercial bakers have access to dozens of different flours. If you want really good bread, buy a good quality bread flour--even if you have to make a deal with a local baker. If you buy your flour at the grocery store, be aware that all flours are not equal. For bread you want a bread flour. Name brands are likely to do a better job of holding to a specification and will provide more consistent results. You can get an idea of the protein content from the nutrition label. Divide the grams of protein by the grams in the serving size to get the approximate percentage of protein in the flour (subject to rounding error). For home baking, you want at least ten percent and preferably higher. Understanding Yeast Yeast is a living organism. The gases expelled by the growing yeast are what leavens the bread. The skilled baker recognizes that with the dough, he or she is culturing a living organism and that the yeast must be growing in the right culture to create the gases to make light airy bread. The right culture is primarily a function of moisture, temperature, and pH or the acidity level. A Dough Conditioner This brings us to our dough conditioner. Dough conditioner alters the pH of the dough (among other things) so that it enhances the growth of the yeast and it makes the dough more extensible. All else being equal, dough conditioner can make a good bread great. You can buy dough conditioner (or dough enhancer as it is sometimes called) in some grocery stores or you can get our dough conditioner. Ours is a commercial dough conditioner that we have found to be very good and that we use in all our breads. You can buy dough conditioner from us but, for a limited time, we’ll give it to you free with your order of $25 or more. A Thermometer And finally, a thermometer has been called the baker’s secret weapon. We would not think of making bread without one. We use it to measure water temperature. (When we use our bread machines, we measure the water temperature to exactly 80 degrees—not one degree off. When we make bread in our stand-type mixer or by hand, we use water between 100 degrees and 110 degrees.) We nearly always measure the temperature of the bread when it comes from the oven. And you can use a thermometer to measure the temperature of the dough to make sure that you have the right temperature for your yeast to thrive in. You can buy an insta-read thermometer at most department stores and many baking sites for $10 to $15. There you have it. Start with the right flour. Make sure you understand how yeast works. Use a good dough conditioner and a baker’s thermometer. You’ll soon be baking great bread.

         
    The simplicity of french press coffee

     

    Although there are different methods for producing a great cup of coffee - from instant coffee to complex cappuccino machines - most people tend to make theirs with the simplicity of an electric coffee maker. But there are other methods accessible to you that can make a great cup of coffee, such as French press coffee. If you haven’t seen one in use, then you’re missing out on a simple way to produce a rich cup of coffee. The Pot The main hardware for French press coffee is the plunger pot, and it’s basically all you need in order to make coffee with this method. It consists of a small jug with a sort of plunging mechanism on top. This plunger has a sort of mesh on it which is used to filter out the coffee grounds. In order to make French press coffee, you add water directly to the grounds in your plunger pot and let it steep for a few minutes. You then push down on the plunger to filter out the grounds from the liquid. The making of French press coffee is no more difficult than that, easy enough for anyone to operate. The Coffee When you grind your beans for French press coffee, you want to shoot for a coarse grind, since larger pieces will get filtered out better by the mesh of the plunger. French press coffee will produce a stronger brew than you’ll get with a coffee machine, which is great if you like a coffee with a lot of flavor. Keep in mind that with this method, there will be some small particles in the coffee after pouring. This is normal, and it doesn’t mean that you’re doing something wrong. One thing to know about French press coffee is that it should be served right away, since the water and grounds are still in contact. If you wait too long, the mix will become unpleasantly acidic. So don’t make French press coffee and expect it to be good for a second cup in an hour. For this reason, most plunger pots are small in size. Convenience French press coffee is remarkably easy to make and low-tech, since you can make it without electricity. For this reason, it’s great on camping trips, since the plunger pot fits easily in a backpack and can be used outdoors. Similarly, for those traveling without guarantee of a coffee machine at their destination, a French press coffee jug can fit easily in your travel bag and ensures you can have a cup wherever you go. With the convenience, ease of use, and flavor that French press coffee making provides, it is sure to be a hit with you and your family.

         
    The skinny on omega 3 fats

     

    By this point, unless you just bought your television, computer, and newspaper subscription last week, you’ve probably already heard about omega-3 fatty acids. Nutritionists rave about them; cooks try to include them with every meal. Even food companies are getting in on the action (noticed any “Omega-3 enriched” products like eggs, oils, and dairy on your store shelves lately?). One thing very few people know, however, is why omega-3 fats are good for you. Collectively our understanding of this wonderfat rarely goes beyond “we need to eat more of it.” This isn’t the best course to take; you shouldn’t load up on something in your diet until you know precisely why you’re eating it. Did you know that omega-3 is a designation for several fatty acids, not just one? That, while it is incredibly good for you, it should be balanced by a healthy amount of omega-6? Read on to find out the skinny on this fat! For starters, let’s talk about the three major types of omega-3: alpha-lenolenic acid (ALA), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA). All three of these acids are polyunsaturated fats, and they’re considered essential fatty acids—meaning we need them to survive, and the body can’t make ‘em on its own. ALA breaks down into DHA and EPA during digestion, making the latter two essential nutrients. There’s been a lot of hubbub about these fats in the last few years, and with good reason. They’ve been demonstrably linked to improved circulation and a reduced risk of heart disease. They reduce inflammation and improve fluidity of cell walls, lower “bad” cholesterol. Many of their effects seem related to the brain, as well. For instance, infants deprived of omega-3s while in the womb risk vision problems and nerve disorders; in another study, poor-performance children supplied with omega-3 and other essential nutrients for 15 weeks showed marked improvement in cognition and behavior. All good things, right? Absolutely, but don’t go out and load up on all those omega 3-enriched products we mentioned earlier. Since most are enriched with ALA, it’s better to go directly to sources of EPA and DHA (which ALA breaks down into). Unless the packaging specifically says “enriched with EPA/DHA,” forego those omega-3 eggs in favor of a DHA-rich filet of salmon. Or a cup of walnuts. Or some flaxseed—the list goes on, but these three are the greatest sources of omega-3 in our diet; a serving of flaxseed oil, for example, provides 140% of your daily value of omega-3 fat. A handful of walnuts will give you 90.8%. And a 4-oz. filet of broiled chinnook salmon will get you 83.6 percent. Don’t gobble down salmon three meals a day, though; overconsumption of these fats can lead to increased bleeding, weakened immune responses, and heightened risk of stroke. In addition, don’t forget to consume a certain amount of omega-6 fats—you know, the kind found in beef, dariy, that kind of thing. Omega-6 and omega-3 work in balance to keep your body healthy, strong, and in disease-repellin’ shape; too little omega-6 can lead to scaly skin and weak muscles, among other creepy side effects. Now that you know why you need omega-3, fill your bellies along with your brains by trying some of these great omega-3-filled recipes! Salmon Sauteed Salmon with Whiskey Sauce Try a deliciously grown-up preparation for those salmon fillets. Horseradish-Encrusted Salmon This salmon dish can either be eaten as a main course with some sides or add on top of a leaf salad for a light lunch. Wolfgang Puck's Basil-Crusted Salmon with Tomato-Eggplant Fondue This delicious salmon's accompanying sauce is a perfect choice for summer. Being composed almost entirely of vegetables, with just a touch of olive oil, it's incredibly light and healthful — just the thing you want to eat at this time of year, when you're thinking about getting back into your swimsuit! Walnuts Wolfgang Puck's Winter Greens Salad with Mustard Vinaigrette, Toasted Walnuts, Orange & Warm Goat Cheese Croutons Serve this up at a wintry weekend lunch or dinner, and there's no chance your guests will gaze wistfully out the window. Gorgonzola Walnut Ravioli with Sage Butter You could use any pasta here, but the ravioli named in the title makes this dish positively decadent. I got this pasta at Trader Joes, my new favorite place to shop. I'm a latecomer to the TJ party and only recently discovered how fantastic and inexpensive they are. Apple, Carrot, Cranberry and Walnut Muffins The muffins with everything, tasty and healthy to eat. Lemon Green Beans with Walnuts Steamed green beans tossed with butter, lemon zest, lemon juice and toasted walnuts. This is excellent with asparagus also. Pecans can be substituted for walnuts.     The soul of a coffee mug

     

    A coffee mug can be different things to different people. It can be large or small and made out of a variety of different materials. Coffee drinkers all around the world use different types of containers to hold their morning-- or all day long-- cups of coffee. Manufacturers use different materials to make different kinds of drinking utensils for holding scaling, steaming cups of coffee, and each has a personality of its own. Some people use the same coffee mug year after year, while others get a different one each day. The most common material to make a coffee mug out of is porcelain, followed by stainless steel, like a giant thermos and its top 'mug' cup, or plastic or glass. Porcelain and glass are the most common for household coffee drinkers, but so are 'porta-mugs' and insulated mugs that can go wherever you go. Most insulated coffee mugs fit inside special holders in vehicles, or hang on the window with a hook that allows for easy, and quick, access. Since many people don't think they're even human before they've had that first sip of coffee to get them going in the morning, a coffee mug takes on a special sense of importance to some people. Some people like their names engraved on 'their' coffee mug, and nobody better touch it or else. Coffee mugs come in all kinds of shapes and sizes as well, and imagination is the only limitation to design. While porcelain holds the heat in, they can also be difficult to hold because of that heat. They're also very easy to break, and most people don't care to have hot coffee spilled all over them first thing in the morning, or any other time. Plastic coffee mugs are okay for most uses, but they don't hold the heat in very long and coffee gets cold rather fast. A stainless steel mug or thermos mug does the trick in keeping coffee hot, sometimes scaling, but then you still have the same problem hanging onto it without burning your hands. Most coffee mug designs however, are fitted with lids nowadays, and are made of insulated plastic that not only keeps that coffee piping hot, but also allows you to hold it without getting scorched fingers. The coffee stays hot for a very long time, allowing for sipping rather than hurried gulping. This type of mug is the most common these days, as it's easy to take with you whether you're driving, walking, or hurrying to and fro. Most mugs hold at least two regular cups of coffee, or thereabouts, and no less. Gotta make it worth your while, don't you, especially if you're transporting it to work with you. If a person can carry a super sized cola drink, why not a super sized container of hot coffee? Many insulated coffee mug designs can hold up to 24 ounces of hot coffee, offering the coffee drinker hot java all day long. Just remember: a coffee mug by any other name is still a coffee mug.

         
    The stimulating effects of black tea and green tea

     

    The effect of tea on your body depends largely by the growth stage of the leaf, the brewing time, the amount of tea used and a person's sensitivity to tea's ingredients. The stimulating effect of a tea is mainly due to what is called alkaloid caffeine which is then linked with tannin found in a tea leaf. Almost the entire amount of caffeine is dissolved during the infusion within the first 1-2 minutes because caffeine dissolves well in hot water. This is without the tannin. This short brewing time results to a brew with a high level of caffeine not related to tannin. If the tea is brewed for a longer time about 4-8 minutes, the tannin as well as other ingredients start to dissolve gradually. This results, however, to a stronger brew. Tannin has the ability to prevent or delay the caffeine from being absorbed quickly in the stomach or intestines. It has been found that this delayed effect can stretch the cumulative effect of caffeine to 10-12 hours with frequent, daily tea-drinking. So, if you want a more stimulating effect of a black tea or green tea, consider a short brewing time and if you only want a slightly stimulating effect, have a longer brewing time. The caffeine of a tea can be reduced by pouring a little boiling water over the amount of tea to be used and then sieving this off after half a minute. When not consumed in excess, tea can have a stimulating effect but not irritating unlike other beverage. This stimulating effect does not raise blood pressure. However, an excess intake of caffeine can cause an increase in blood pressure. A recommended amount of tea to use is a maximum of one level teaspoon per cup of tea leaves with a longer brewing time about 4-6 minutes. This can be consumed naturally without the use of artificial sweeteners or sugar. A tea left for a shorter time only results to a milder brew.

         
    The stimulating magical powers of coffee actually began as a food

     

    Coffee has not always been served as a beverage. African tribes crushed the ripe cherries from wild coffee trees, mixed with animal fat, and rolled them into round balls. These “coffee balls” were served at their war parties. The result of eating these coffee balls was: 1.fat combined with raw coffee’s high protein content provided the African tribes with nourishment 2.the considerable caffeine content of the mixture was of course a “stimulant” that stirred the warriors on to greats heights of warrior abilities I guess one could sort of compare those African tribe coffee balls to the cans of spinach Popeye use to consume to become mighty and strong enough to battle with Pluto for the quest of Olive Oil’s love! When coffee appeared as a beverage in Africa it appeared not in the form as we know it, but as a wine that was made from fermented juice of the ripe cherries mixed with cold water. Later in around 1000 A. D. the Arabs learned to boil coffee. This is when coffee became a hot drink. From coffee’s first discovery the new drink was surrounded by mystery, and thought to have magical properties. The first coffee drinkers described experiences of sensations ranging from exhilaration to religious ecstasy. Legends about how coffee could create great physical and mental feelings of well-being created a mythical status that spread throughout the Arab world. It was at first consumed only on the advice of a physician or a beloved priest. Coffee as a beverage became rapidly popular. Doctors accepted coffee as beneficial and prescribed it to their willing patients. Dervishes provided coffee at night-long religious services in Aden, Yemen, Cairo and Mecca. They passed huge jars of coffee around and chanted prayers until the new day arrived. Lawyers, artists and those who worked at night discovered the benefits of coffee for staying awake for long hours. Soon doctors no longer had to prescribe coffee. Coffee was becoming a permanent staple of the civilized Eastern world. As the demand for coffee continued to grow, the Arabs developed an effective form of cultivation. They started coffee plants in nurseries from seed and transferred the young plants to plantations in the foothills of nearby mountains. They irrigated the plants using a system of pebble-lined trenches that distributed water from the mountain streams throughout the young coffee tree plants. Shade poplars protected them from the sun. As popularity of coffee grew methods of preparation became more sophisticated. People started preparing coffee as a decoction from the dried hulls of the bean. Then someone got the idea of roasting the hulls over charcoal fire. Further advances in preparation included whole beans roasted on stone trays, then on metal plates. Next, the roasted beans were pulverized with a mortar and pestle and the powder was combined with boiling water. For over 300 years, this decoction that included ground and all was consumed, as the main method of coffee preparation. Economy: Every business has a specific marketing strategy that usually works best and has already been proven by your most successful competitors. You can benefit from their experience by copying successful marketing plans, including selling methods, pricing and advertising. Make a list of the most successful businesses that fall within your field of interest and study them. Successful local businesses are a goldmine of valuable information. Continue to make visits even after the tea room is started. Solicit feedback from your customers. For example ask questions like “how did you find us?” And “what did you enjoy about our tea room?” In addition constantly review operations. If tea is consistently left in the pot or scones are frequently returned, consider revising your menu with more desirable products. It will be difficult to make sound marketing and promotional decisions without being informed on customer real wants and needs. If a specific geographical area defines your market, low cost demographic reports based on the census can be obtained that will furnish information on population by race, income and home ownership. For resources that provide this information, use Google to search for "demographic data" on the Internet. Competition: Understanding the strength and weaknesses of the competition is an important part of the planning process. The first step in understanding the competition is defining who actually the competition is. If there is another tea room in the vicinity, defining the competition is obvious. But if there are a number of entities offering complementary products to tea the choice is less clear. After the competition is identified, their weakness must be attacked. These include: • Offering low quality tea and food products • Utilizing shabby or dirty tea ware • A menu that is limited and not complimentary to the tea experience • Provide a tea environment that is cold and sterile or shabby and trashy • No attention to customer service • No promotion – a “build it and they will come” message The Internet: For the tea room, the most effective and economical place to developing good marketing information is the internet. With the introduction of advanced, powerful search technology (e. g. Google) searches are cost effective, powerful and can be continuously updated. Further by proper use of the internet, a tea room owner can gain experience from tea rooms across the country. Tea Room Tip: Loose leaf tea drinkers are demanding but will pay for quality and service. Give your customers more than they expect. Tea Room Tip: Learn what marketing works best from others in your business.     Business does not exist in a vacuum and you will not be successful just because you are a nice person. Business doesn’t work that way. All business represents an exchange of one form or another and the exchange is usually facilitated by money. The essence of the exchange however is the perceived value added on behalf of the customer. If your customer perceives that your offering adds value to their life or business, then there is a good chance that customer will do business with you if you ask for his business. Without perceived value added however, you will not get the business and your business will fail. It is as simple as that. But remember that value must be perceived and communication to customers and prospects is as important as the value itself. What are the ways to establish perceived value in a Tea Room Business? First, understand the world of tea. Tea education is important if you are going to open a tea business. The more you know about tea, the more you will be able to educate your customers. The more you teach your customers, the more satisfied clients you will have. Satisfied customers become repeat customers which is what your goal is for your business. A tea room is a business that provides high quality tea and food products coupled with a comfortable, attractive setting and good service. Each element sends a message that reinforces a value added proposition. With the proper value added proposition, the tea room will be able to sell on quality (not price) and charge a premium price for products and services.
